Ham Pineapple Loaf
1 pound smoked ham, ground
1 pound fresh pork, ground
1 cup soda crackers, crushed (about 10 crackers)
1 cup onion, chopped
1 cup milk
1 tablespoon parsley, chopped
1/8 teaspoon pepper
6 large pineapple slices, drained (save juice)
Combine all ingredients, except pineapple!. Shape mixture into 6 patties the diameter of pineapple slices!. Arrange alternating ham patties and pineapple slices in shallow baking dish or bread pan to make a loaf!.
Glaze for Pineapple Loaf
1 cup brown sugar
2 tablespoons pineapple juice (from above)
1-1/2 teaspoons cider vinegar
1 teaspoon prepared mustard
Blend all ingredients!. Brush on ham loaf for the last half hour of cooking!. Separate loaf sections and serve on warm platter (one slice meat, topped with a slice of pineapple!.) Bake at 350 for 1 hour and 15 minutes!.
Serves 6!.

4 boneless, skinless chicken breasts (about 1 1/2 pounds)
Salt and pepper to taste
1/2 cup flour
2 tablespoons vegetable oil (canola, corn, peanut)
Hawaiian Sauce
1 (8 ounce) can pineapple chunks, with juice
1/2 cup brown sugar
3 tablespoons soy sauce
1 tablespoon fresh ginger, minced
1/8 teaspoon ground cloves
1/4 teaspoon paprika
1/2 teaspoon kosher salt
1 tablespoon flour
Remove tenderloin from chicken breast to allow it to cook evenly!. Salt and pepper all of the chicken!. Place flour on a plate and coat the chicken (including the tenderloins) on both sides with flour, pressing to make sure it adheres!. Shake off excess flour!. In a large, heavy skillet, heat oil over medium-high heat!. Once the oil is hot, add the chicken pieces to the skillet, without crowding the pan, work in batches and add more oil if necessary!. Sauté chicken for 4 minutes, without moving, it will become nicely brown!. Adjust the heat--up or down if needed!. Turn the cutlets and continue to sauté for an additional 2 to 3 minutes until chicken is evenly browned and cooked throughout, (tenderloin pieces take less time, 2 minutes per side) Transfer the chicken to a plate and remove the skillet from the heat!. Sauce: Add the pineapple with the juice, brown sugar, soy sauce, ginger, cloves, paprika and salt!. Return the skillet to medium heat and stir for a minute!. Add the tablespoon of flour and continue to heat the sauce, stirring to collect any remaining juices and brown bits from pan, and allowing it to thicken slightly (about 2 minutes)!. Pineapple is excellent with pork, both fresh, smoked, and barbecued!. I like it with cottage cheese as well, just a ring of pineapple with a scoop of cottage cheese in the center!.

I like it plain, just in spears!. Golden P/A is my favoirte!. Or grilled rings or slices, served along w/ chicken!. I even like it made into a casserole, w/ a ham!.

1 (20-oz) can juice-packed pineapple chunks or tidbits, drained, reserve juice
1 (20-oz) can juice-packed crushed pineapple, drained
1 cup crushed Ritz crackers (about 1 stack)
? stick butter, melted
1/3 cup reserved pineapple juice
Preheat the oven to 350oF!. Spray a medium-size casserole dish with cooking spray!.
In a large bowl, whisk together the sugar and flour!. Gradually stir in the cheese!. Add the drained pineapple and stir until ingredients are combined!. Pour into the prepared casserole dish and spread out evenly in pan!.
Sprinkle cracker crumbss on top of pineapple!. Drizzle butter evenly over crackers, then repeat with P/A juice!. Bake for 25 to 30 minutes, or until golden brown!. Serve warm with baked ham, turkey, chicken or pork!. Reheats well!.Www@FoodAQ@Com

I'm most familiar with the Indian curry!. It is a spiced sauce with meat or veggies!. It often has things such as tumeric, cumin,curry,bay leaf, yogurt, tomato(or paste),etc!.!.
