Question: A failure of a strawberry pie :-(!?
I tried making a strwaberry pie which seemed simple but it never firmed up!? All it included was: Strawberries, sugar, cornstarch, lemon juice and almond extract!. Cook until thickned then add to pie crust and chill in fridge for 4 hours!. It never firmed up to a solid consistancy!? There was no way to slice this!. What did I do wrong!? Any tips!?!?Www@FoodAQ@Com

The same thing happened to me not too long ago, and turned out it wasn't me, but the recipe!. Figured out that the recipe didn't list enough cornstarch -- so the next time I doubled it!.Www@FoodAQ@Com

"Half of this pie 's strawberries are arranged in a baked pastry shell, and the other half are crushed and cooked up with sugar, water and cornstarch until thick and bubbly!. This lovely glaze is then poured over the whole berries in the pastry shell!. Chill this pie for several hours and serve it with mounds of whipped cream!."
Ingredients:
1 (9 inch) pie crust, baked
1 quart fresh strawberries
1 cup white sugar

3 tablespoons cornstarch
3/4 cup water
1/2 cup heavy whipping cream
Directions:
1!. Arrange half of strawberries in baked pastry shell!. Mash remaining berries and combine with sugar in a medium saucepan!. Place saucepan over medium heat and bring to a boil, stirring frequently!.
2!. In a small bowl, whisk together cornstarch and water!. Gradually stir cornstarch mixture into boiling strawberry mixture!. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly!. Pour mixture over berries in pastry shell!. Chill for several hours before serving!. In a small bowl, whip cream until soft peaks form!. Serve each slice of pie with a dollop of whipped cream!.Www@FoodAQ@Com

This recipe works every time!. If you use your recipe again, cut out the lemon juice!. Have never used lemon juice in any strawberry pie!. Sally was a very special lady, and everyone loved her pies!.!.!.

Sally Restelli's Strawberry Pie

9" baked pie shell
2 pints fresh strawberries
3/4 c!. sugar
3 T!. cornstarch
2 T!. strawberry gelatin
1 c!. water
red food coloring (opt!.)
whipped cream

Remove stems from berries, wash and drain on paper towels so they are thoroughly dry!. Arrange in pie shell!. Place sugar, cornstarch, gelatin and water in saucepan!. Cook and stir constantly until clear and thick!. Add several drops of food coloring!. Cool for 15 minutes!. Place berries in pie shell!.

Pour cooled glaze over the berries, making sure each one is covered!. Refrigerate until set!.

Serve with whipped cream!. This cannot be made more than 5 or 6 hr!. in advance!.

You didn't give the quantities of any of the ingredients, so it's hard to tell what you did wrong!. But, you probably didn't cook it long enough to thicken!. Next time, make a fresh strawberry pie!. Put a thin cream cheese filling on the crust (or custard); top with fresh berries and put a glaze on top of themWww@FoodAQ@Com
