Question: What can i put in my scalloped potatoes to put some spunk into them!?
Answers:
Not sure if you're going for a spice, but I'd add some paprika and/or hot sauce and garlic powder!. Or you could add ham, bacon bits, canadian bacon or cheese!.

When we were kids my mom made a stove top casserole of potatoes, corn, Spam, cheese, mushrooms and onions!.
Layers of the ingredient alternated with cheese, and milk was added!.!.!.Oh, and flour was sprinkled in between the layers too!.!.!.Then she cooked it very low and stirred occasionally until the potatoes were tender!. (I've done it with ham instead of Spam, but it's been many years!)Www@FoodAQ@Com

I make this hot dish a lot!. If you like spicy add some hot peppers or extra salsa!.

1box (4!.9 oz) scalloped potatoes
2 1/4 cups boiling water
3/4 cup milk
1/3 cup shredded Monterey Jack cheese
1/3 cup shredded Cheddar cheese
1/3 cup Chunky salsa
2 chicken breasts (cooked and cubed)

1!.Heat oven to 400!. Stir together Potatoes, Sauce Mix and boiling water in ungreased 2-quart casserole!. Stir in remaining ingredients!.
2!.Bake uncovered 50 to 55 minutes or until potatoes are tender!. Let stand a few minutes (sauce will thicken slightly)!.Www@FoodAQ@Com

Grill up some onions and garlic, or even carmalize the onions!.

Add nutmeg if you make the bechemel type sauce!.

Roasted garlic!.

Add some salsa or hot sauce!.

Add different cheeses!. Make a mix of feta, shredded provolone, white chedder etc!.!.!.!.

What about adding cream cheese to the sauce!?

Simmer a spice "baggie" in the sauce!.

Use a 50/50 mix of bechemel sauce and cream of mushroom, celeery, chicken etc!.!.!. soup!.Www@FoodAQ@Com

a dash of saffron mixed in hot water and sprinkled generously!. It makes the potatoes taste wonderful and fragrant!. Tthe fragrance invites everyone to ask you, "oh my, what lovely scalloped potato are you making" :)Www@FoodAQ@Com

fresh herbs (oregano & rosemary; cracked red pepper flakes)!. Try using a smoked cheese (Edam, provolone, gouda) !.!.!. I use Tony Chachere's Creole seasoning in just about everythingWww@FoodAQ@Com

Depends on what flavors you like but some ideas, jalapenos for heat and flavor!. Paprika can change it up or maybe nutmeg for a mysterious difference!.Www@FoodAQ@Com
