Do you have any good drippings from the pork!? You could suppliment it with some bacon grease!. Put in a pan, or if you roasted the pork then just remove the roast and put the roasting pan on the stove!.
Sprinkle in some flour, and let it bubble for 2-3 min!. Slowly add evaporated milk, regular milk or 1/2&1/2 alternately!. Whisk well, and let it thicken a bit between each addition!.

This is how I make mine when I make gravy for chicken-fried steaks or biscuits and gravy!. I usually don't measure out my ingredients, but this recipe is the closest thing to my gravy!.
PAULA DEAN'S MILK GRAVY
1-2 tablespoon vegetable oil or vegetable shortening (see note below)
4 tablespoons all-purpose flour
3 cups whole milk
1 teaspoon black pepper
1/2 teaspoon salt
NOTE: This recipe will have more flavor if you use 1-2 tablespoons of oil from the oil you fried chicken fried steak in, or maybe even bacon grease!. If you don't have that, no need to worry, you can use vegetable oil or vegetable shortening!.
Heat 1-2 tablespoons oil in a skillet over medium heat!.
Whisk in flour, whisking constantly for about 1 minute!.
Slowly add milk, whisking constantly!.
Stir in pepper and salt and continue cooking!.

Add a couple T!. flour to your drippings, season with salt and pepper, then stir in 2 c!. milk and cook, stirring until smooth and thick!.Www@FoodAQ@Com
