I'd assume it means making everything from scratch, with pure ingredients (nothing packaged)Www@FoodAQ@Com
My mother calls herself a cooking purist -- and she considers me one also!. What she means by the term is that we prefer the natural taste and flavor of food, without too much added that would overpower the taste!. For example, with mashed potatoes, we only add the basic ingredients such as butter, milk, salt and pepper!. You won't find sour cream, cream cheese, garlic, or any other extra ingredients!. In her opinion, these types of additions don't enhance the flavor but instead hinder the natural flavor!.
My mother's sister, who is an excellent cook, is much more adventurous with her ingredients and deviations from recipes, but my mom (who is also an excellent cook) sticks to original recipes and is reluctant to add anything that might deter from the original taste!.
We also do not add anything to our steaks, except for a pat of butter after grilling!. We prepare Prime Rib for Christmas every year, and never add salt and pepper before roasting -- and we also do not serve it with Horseradish sauce!.
Not sure if our opinion of the term purist is the same as your opinion!.Www@FoodAQ@Com
