Yes you can!. I used to work at a cheese shop and once a week my boss would make me unwrap cheese with mold, cut it off and re-wrap it!.Www@FoodAQ@Com

All you need to do (you did) was cut the mold off and it's fine!. I grew up on mold, and moldy cheese!. Momma just cut the fuzzy parts off!.

It's best to shave the moldy parts off so you keep most of the cheese!. Then, wrap it in wax paper so it can breathe (so says Alton Brown)!. I keep mine in a plastic bag!.

Cheese is mold to begin with!. Ever heard of "aged cheddar"!? Eat it, it's fine!.Www@FoodAQ@Com

Yes you can, the white mould is similar to what you get on Brie and the blue is a form of penecilian mould, like in blue cheese!. How ever it is advisable to remove all signs of mould first, as brie, blue etc!.!.!. are produced in controlled circumstances with specific cultures!.Www@FoodAQ@Com
