What to do with LOTS of mushrooms?!


Question: What to do with LOTS of mushrooms!?
I am the only one in the family that eat them so I can't add them to spag bol or lasagna or any other family meal so will have to use them as a side dish for myself!.
I accidental (online shopping) bought 750g!.

I've been making this recipe for years!. I absolutely love it! I first saw this on Micheal Chiarello's 'Easy Entertaining' and have been making different versions since!. The wine makes all the difference here, so don't leave it out!.


Ingredients

Button Mushrooms - 2 packets
Garlic – 1 tbsp, minced
Fresh Thyme – 4 sprigs
White Wine – couple of splashes
Olive oil – 1 tbsp
Butter – 1 tbsp
Salt
Pepper

Heat the olive oil and butter in a large flat non stick pan!. Arrange the mushrooms in the pan, cap side down!. Cook on medium-high till the mushrooms caps are golden, about 5 minutes!. Don’t move the mushrooms around; if you do they wont caramelize!.

When the mushroom caps are golden add the garlic and thyme!. Toss and let it cook 30 seconds!. Then add the wine and cook on high till the wine evaporates!. Turn off heat and add salt and pepper

Ingredients
(Serves 2)
50g butter
2 tbsp chopped fresh herbs like english parsley/basil (you can also use 2 tsp dried herbs)
1/4 onions, small pieces
1 tbsp chopped garlic
150g fresh mushrooms (stems removed, sliced)
1 teaspoon light soy sauce

Directions
Melt butter in heated wok/pan!. Sauté the herbs, onions and garlic in the melted butter till the garlic is lightly browned!. Add mushrooms and light soy sauce!. Stir fry till mushrooms are cooked and evenly coated in the butter!. Sprinkle some grated black pepper and serve!.

NIGELLA’S LINGUINE WITH LEMON, GARLIC AND THYME MUSHROOMS

8 ounces/4 cups finely sliced chestnut/cremini mushrooms
1/3 cup extra-virgin olive oil
1 tablespoon Maldon/kosher salt or 1 1/2 teaspoons table salt
Small clove garlic, minced
1 lemon, zested and juiced
4 sprigs fresh thyme stripped to give 1 teaspoon leaves
1 pound linguine
1 bunch fresh parsley, leaves chopped, to give 1/2 cup
2 to 3 tablespoons freshly grated Parmesan, or to taste
Freshly ground black pepper


Slice the mushrooms finely, and put them into a large bowl with the oil, salt, minced garlic, lemon juice and zest, and gorgeously scented thyme leaves!.
Cook the pasta according to the packet instructions and drain loosely retaining some water!. Quickly put the pasta into the bowl with the mushroom mixture!.

Toss everything together well, and then add the parsley, cheese and pepper before tossing again!. Eat with joy in your heart!.Www@FoodAQ@Com

This is the best recipe for finishing your mushrooms

Mushroom – 1 lb
Onion –2 ( cut lengthwise)
Red chilli powder – 1 or ? tsp
Pepper powder - 1tsp
Turmeric powder - ? tsp
Garam masala powder -1/4 or 1/2 tsp
Salt - to taste
Oil – 2-3 tsp
Coriander leaves - (for garnishing)

Method

1!. Chop the mushroom top to bottom into thin slices to retain the mushroom shape!.
2!. Now heat oil in a kadai(vessel) or deep sauce pan, add mustard seeds and curry leaves!.
When the mustard seeds pop, add the onions!. Saute the onions until they are golden brown!.
3!.Next add the mushrooms and fry on medium flame for about 6 minutes or until all the mushroom is nicely browned!.
4!. Now add salt, chilly powder, pepper powder, turmeric powder and garam masala!. Fry everything for another 2 minutes!.
5!. Garnish with coriander leaves, split chillies and lemon!.Www@FoodAQ@Com

throw into salads
throw them into casseroles hide in the cheese and potatoes or rice

You could cook them and put them on steak,fry with some garlic and butter along side your veggies,stiryfry,risotto,oven bake with cheese,puree cooked mushrooms and add some cream,black pepper to make a nice sauce for any meat of veggiesWww@FoodAQ@Com

Stuffed mushrooms -

MIx saute finely chopped onions, breadcrumbs, herbs and seasoning, thawed frozen Spinach (drained), sour cream and parmesan cheese to taste, - stuff mushroom caps and bake 180 degrees until golden brown!.

My favorite way to eat mushrooms is to saute them in some butter!. Add fresh garlic towards the end of cooking so you don't burn the garlic or add garlic powder in the beginning!. Add salt and cracked black pepper at the end and enjoy!.Www@FoodAQ@Com

What about a stir fry they are lovely fryed and beacuse they shrink you will need to use more
