OH, I hurt for you! I'm trying to lose some of my 195, after being 218! [I'm 57!.]

Take your time and check out the library and web for some quick help for ALL your veggie needs!. Do thumb through cookbooks at a bookstore! Don't forget to check the web for the 'nutrition' contained in each of your veggies to help you get the most out of your diet and meals! Do steam veggies when possible!.

Many of the previous suggestions are good but watch out for, my weakness, soy sauce!.
[ it has too much salt which keeps the water in you and lbs!. on! ] I've found that adding those salt-free herbs you can buy are great!.

also, my hubby and I find that a mixture of olive oil-Japanese seasoned vinegar does very well with many of the green veggies!.

Keep a rule of thumb when adding things to your veggies!.!.!. just enough seasonings to say you 'added some' not flood them down!.
Try this on your corn-on-the-cob: A little lemon juice with splash of hot sauce or sprinkle of chili powder!. What would other ethnics put on the same veggies!?

If you like them, do try quartering Brussels sprouts and put them in your stir-fries! Think of this as a treat for yourself when trying something new!. After all, the point is having fun, learning something new and that will keep you happy! [and slimmer!]

Broccoli pairs nicely with a little balsamic vinegar!.
If you don't like the flavor of the vinegar straight out of the bottle, you can try cooking down on the stove until it reduces by about half!. That will sweeten it up a bit naturally, without having to add any extra sugar or fat!.

Another one of my favorite veggie dishes is just plain old yellow and white corn!. I happen to like the SteamFresh variety, which you steam in your microwave!. It's naturally sweet and has a nice crunch!.Www@FoodAQ@Com

I have found when I mix my veggies together and add a little flavour such as those listed below they can actually become quite tasty!.

You can try stir frying them by using a tablespoon of extra virgin olive oil and adding natural flavours such as onion and garlic (strongish flavours) you can also add any number of herbs such as rosmary, thyme, oregano, parsley and many others which have lovely flavours too!.
You could make a salsa from extra virgin olive oil, tomato, onion, capsicum, garlic and herbs - simply chop the veggies, fry in olive oil then add water, simmer and reduce - this makes a very tasty "sauce"!.

Then theres always caseroles, and soups where you just chop them throw them in a pot and cook!.Www@FoodAQ@Com

If you are using frozen broccoli - use low-fat chicken broth instead of water when you cook them!. It flavors it nicely and no need for butter or cheese!.

If you have already cooked veggies - sprinkle some butter substitute (butter buds - I believe they are called) if you like the butter flavor!. I just like using Mrs!. Dash's garlic and herb or extra spicy for an extra kick!.Www@FoodAQ@Com

Believe it or not, red wine vinegar and olive oil and garlic taste great with broccoli and green beans (a little salt is good too)!.

Lemon juice in place of vinegar is quite good as well!.

Toss with some olive oil and roast or saute!. I love lemon juice on it too!. Do the same with brussel sprouts!.
With green beans, I like to saute in a little olive oil and then sprinkle on some balsamic vinegar!.
You can add pearl onions to peas along with a little mint!.

This is a good low fat sauce I put on my veggies!. Simple but flavorful!.

Vinaigrette:
Juice from 1/2 lemon (2 tbsp)
3 tbsp extra virgin olive oil
1 clove garlic, crushed
1 small shallot, minced
Salt and pepper

In a small bowl, whisk the lemon juice, olive oil, garlic, shallot, salt and pepper!. Top steamed veggies with this!.

As for carrots I like to mix a little brown sugar, dijon mustard and a little bit of margarine together and put on already cooked carrots!.

Here;'sa good way to add some veggies in your diet!. They are really tatsy!. These delicious pancakes are similar to potato pancakes, with less carbs!. They make a great side dish

2 medium zucchini, grated
2 shallots, finely chopped
1/4 cup fresh chives
1/4 cup parsley, chopped
1 garlic clove, minced
2 eggs
1/4 cup grated Parmesan cheese
6-8 tbsp whole wheat flour
kosher salt and fresh pepper to taste
olive oil spray

Grate zucchini using the large holes of a cheese grater and place in a large bowl!. Add flour, shallots, garlic, parsley, chives, eggs, cheese, salt and pepper!. Season with salt and pepper!.
Heat a large skillet over medium heat and spray oil to cover pan!. Drop tablespoons of the batter into the skillet!. Cook about 2 minutes on each side until golden brown!. Set aside and keep warm!. Spray more oil in the skillet as needed, and continue with remaining batter!. Makes about 20 small pancakes!.


SWEET POTATO FRIES
A great way to include an orange vegetable into your diet is to eat sweet potatoes!. They are rich in vitamin A and C!.
2 medium sweet potatoes, washed
1 tbsp olive oil
paprika
fresh pepper
salt

Preheat oven to 425°!.
Slice each potato into 1/2 inch thick strips!. Toss with oil, salt, pepper and paprika!. Place on a non-stick baking sheet and bake for 15 minutes!.
Turn potatoes and bake until bottom is browned, about 10-15 minutes more!. Serve immediately!.


ASPARAGUS

2 tsp Dijon Mustard
2 tbsp red wine vinegar
1 tbsp extra virgin olive oil
1 tbsp fresh chopped parsley
kosher salt and pepper to taste
1 pound thin asparagus, tough ends trimmed off

In a medium bowl, whisk mustard, vinegar and 1 tbsp oil!. Add parsley and season with salt and pepper!.
Boil asparagus for 3 - 5 minutes!.
Transfer asparagus to a serving dish and drizzle with the vinaigrette!. Can be served warm or chilled!.


Baked Zucchini Sticks
Serve them as an appetizer or as a side dish!. They are healthy and low in fat and guiltlessly delicious! My daughter loves, loves, loves these!. It's her favorite way to eat zucchini and her only complaint is that I don't make enough!.


3 medium zucchini sliced into 3" x 1/2" sticks
1 large egg white
1/3 cup seasoned bread crumbs
2 tbsp grated Pecorino Romano cheese
cooking spray
1/4 tsp garlic powder
salt
fresh pepper

Quick Marinara Sauce (1 cup) (or buy it)

1 tsp olive oil
2 cloves garlic, smashed
1, 28 oz cans crushed tomatoes (I like Tuttorosso)
1 small bay leaf
1 tsp oregano
2 tbsp chopped fresh basil
salt and fresh pepper to taste

Preheat oven to 425°!.

In a medium pot, heat olive oil over medium heat!. Add garlic and saute until golden, being careful not to burn!. Add crushed tomatoes, salt, pepper, oregano, basil and bay leaf!. Stir and reduce heat to low!. Cover and let simmer about 20 minutes!.

In a small bowl, beat egg whites and season with salt and pepper!. In a ziplock bag, place breadcrumbs, garlic powder and cheese and shake well!. Spray cookie sheet with cooking spray and set aside!.

Dip zucchini sticks into eggs then into bread crumb and cheese mixture, a few at a time and shake to coat!. Place the breaded zucchini in a single layer and spray more cooking spray on top!. Bake at 425° for about 20-25 minutes, or until golden brown!. Serve with 1/2 cup marinara sauce for dipping (!.5 pt)Www@FoodAQ@Com

are you Five!? just the the veggies! they already have flavour, you don't need to go smothering them in anything, especially if you are trying to loose weight!. Anything extra you put on them is going to give you extra salt and fat, so just eat them as they are!.Www@FoodAQ@Com
