Recipe for really good Jamaican rice?!


Question: Recipe for really good Jamaican rice!?
My mom is like dying for me to ask somebody how to make really good Jamaican rice!. I don't have a lot of Jamaican friends since I go to a private school which is mostly white(no offense)!. Can anyone help!?Www@FoodAQ@Com

JAMAICAN RICE AND PEAS

1 1/2 c!. cooked red kidney beans, liquid reserved
2 cloves garlic, chopped
1 1/4 c!. unsweetened coconut milk
Water (enough to make 2 1/4 c!. combined liquid)
1 c!. rice
2 green onions, crushed
1 or 2 sprigs fresh thyme
Salt to taste
Coarse black pepper to taste

Cook red kidney beans to package directions!. Put cooked beans into a large saucepan or pot!. Add chopped garlic!. Measure all liquids, including reserved bean liquid, coconut milk and water enough to make 2 1/4 cups!. Add the 2 1/4 cups of liquid to the beans and garlic in the pot!. Add rice, crushed green onion, thyme, salt and pepper to taste!. Bring to a boil!. Reduce heat!. Cover and cook for about 20 minutes or until all liquid is absorbed!.Www@FoodAQ@Com

banana coconut rice

1 tablespoon vegetable oil
1/2 large onion, sliced
1/2 red apple, cored and sliced
1 pinch curry powder
1 cup water
2/3 cup brown rice
1 teaspoon dark molasses or treacle
1 small banana, sliced
1 tablespoon unsweetened flaked coconut
Heat the oil in a saucepan over medium heat!. Add the onion and red apple; cook and stir until onion is transparent!. Season with curry powder, and stir in the water!. Add the rice and molasses, cover, and cook over low heat until the rice is tender, and water has been absorbed, about 30 minutes!. Mix in the banana, then sprinkle the coconut on top!. Heat through for a moment over low heat before serving!.

I know I have another one , but i'm sorry I can't find it !. This one and red beans and rice I just love !. The red beans and rice is very simple with many different versions !.Www@FoodAQ@Com
