Why do biscuits only need 10-12 minutes in the oven?!

Question: Why do biscuits only need 10-12 minutes in the oven!?
I just finished making some cheese biscuits and I'm terribly concerned that they might be undercooked!. They were nice and golden on the bottom and sides and the toothpick came out clean!. I looked at the inside of them and they looked a bit soft but not too much!. I checked many different biscuit recipes and all of them say 10-15 minutes at 375 is adequate!. Is the right!?!?!?

also, if they've been out of the oven for 15 minutes now and are quite cooled, should I put them back in to continue baking!? Or am I just stressing out!?Www@FoodAQ@Com

That sounds about right!. Biscuits are supposed to be soft and flaky on the inside!. The reason why they don't cook for long is because they cook for a higher temperature and there really isn't much liquid in biscuits--it's usually just fat and flour so it's a quick cooking recipe!.Www@FoodAQ@Com

if they came out dry than they are baked and you have nothing to worry about !. The timing of the baking reflects on the small amount of batter or dough used the less the faster baking!.Www@FoodAQ@Com

you're stressing out!. if a biscuit isn't done, it will look a bit doughy in the middle and have a wet look to it!. the worst it will do is come out the other end kinda soft and mushy!.Www@FoodAQ@Com

I wouldn't put them back in!. I don't think that would taste good!. That sounds abotu the right time for bisquits, but if they are made too large, they may take longer!.Www@FoodAQ@Com
