Rack of lamb Question?!

I am cooking a rack of lamb and I usually make roasted potatoes with it and green beans or broccoli and cauliflower with a cheese sauce!.!.!. what other veggies do you think goes well with lamb!?Www@FoodAQ@Com

Snow Peas go very well!. Escarole goes well!. zucchini also!.!.!.!. an of these was just sauteed with a little oil and garlic!. for the snow peas you can use garlic and butter!. throw in a couple drops of red wine vinegar!.Www@FoodAQ@Com

Cheesy Garlic Mashed Potatoes

Ingredients
1 1/3 Pound potatoes (about 4 medium potatoes)

1 Cup Giant Eagle chicken broth or milk

2 Tablespoon butter or margarine (optional)

3 garlic cloves, minced

1 Cup grated cheddar or mozzarella cheese

Salt and pepper, to taste

Serves:4
Pierce potatoes with a fork!. Microwave on high for 13 minutes!. Halve potatoes lengthwise!. Scoop out pulp into a microwave safe bowl!. Mash with a potato masher or mixer!. Place broth or milk and garlic in a small microwave safe bowl and heat for 2 minutes!.



Combine hot liquid with potato pulp!. Season with salt and pepper!. Top with cheese and swirl on top!. Heat in microwave for 1 minute before serving!.

Yellow rice and snow peas with shredded carrots are good with lamb!. Mound the rice in the middle of the rack of lamb to serve!. The shredded carrots are pretty with the peas and taste good!. Don't forget the always delicious mint sauce!.Www@FoodAQ@Com
