What makes a gumbo and gumbo and not a stew?!
Just wondering what the defining ingredient or method is to declare something a gumbo!. I make a seafood stew that everyone calls a gumbo but I call it a stew!.Www@FoodAQ@Com

Gumbo is the name of one recipe!.!.!.the stuff that has okra in it!.!.!.!. :P It varies from family to family and restaraunt to restaraunt but you will find a few key ingredients in every variation that makes it gumbo and not "just a" stew!.

Its the technique of making the rioux, (gravy) by browning flour in butter, sort of like "roasting" the mix until it becomes a rich brown color!. Liquid is added slowly, to form a rioux, which is the basis of the gravy in the gumbo!. Okra adds extra thickness to it as well!.Www@FoodAQ@Com
