How do I get my fried chicken really crispy?!


Question: How do I get my fried chicken really crispy!?
I love fried chicken but when I make it, the breading is so sparse and thin!. How do I achieve really crispy, heavily breaded fried chicken!? also, when I make it, the chicken itself is actually cooked but the breading is not!. What to do!?Www@FoodAQ@Com

double coat it; (egg, then water you use to coat it) stick it in the fridge and give it a few minutes then recoat it!.

also use panko (breadcrumbs) or even potato chips (i like sour cream and onion) or corn flakes (unfrosted) as they are crunchier than just flour!.

finally make sure the grease if hot enough before you put the chicken in!.Www@FoodAQ@Com

i had the same problem, the flour just falling off and the chicken was pitiful looking!. lol!. definitely try the panko it makes a world of differenceWww@FoodAQ@Com

this is the recipe I use!. if you follow the directions exactly, things should turn out real crispy and delicious!

CRISPY FRIED CHICKEN
--------------------------------------!.!.!.

1 1/2 c!. flour
1 tbsp!. garlic salt
1 1/2 tsp!. pepper
1 1/2 tsp!. paprika
1/4 tsp!. poultry seasoning

CRISPY BATTER:

2/3 c!. flour
1/2 tsp!. salt
1/8 tsp!. pepper
1 beaten egg yolk
3/4 c!. flat beer or water

Combine flour and seasoning in medium bowl!. Combine egg yolk and beer or water!. Add gradually to dry ingredients!. Heat canola oil to 365 degrees in fry pan for deep frying!. Moisten chicken pieces!. Dip in seasoned flour, then batter, then back in seasoned flour!. Fry in hot oil for 15 to 18 minutes or until well browned!. Drain on paper!.
If you are using beer and batter becomes too thick, add a little extra beer!. Skin can be removed from chicken and you still have a crisp coating!.Www@FoodAQ@Com

Rinse your chicken well!.!.
Dip in egg that has been scrambled up!.
Dip into flour or crushed corn flakes or crumbled crackers!.
Deep Fry or fry in hot oil with the lid off to achieve the crispness that you desire!.

*If you cover and fry, the coating will be soggy!. It does cook faster though if it is covered!.Www@FoodAQ@Com

The recipes you have gotten are great but they don't mention the fact that after coating with the flour the first time, set the chicken in the fridge to dry well before you dip and roll again!. Then let dry again before frying!.Www@FoodAQ@Com

Mix in a little rice flour w/ the regular flour that you bread it in!. You can also use panko, japanese bread crumbs, to coat it for very crispy breading!.

As for the 2nd question, use raw chicken so it cooks along w/ breading!.Www@FoodAQ@Com

after you wash your chicken dip it into a egg batter and then into flour make sure you put the seasoning in the flour and fry you shouldn't have any problemsWww@FoodAQ@Com
