Why marinate chicken in lime or lemon juice?!


Question: Why marinate chicken in lime or lemon juice!?
I have heard some people saying that they marinate their chicken in lime or lemon juice before cooking it in a curry dish!. is there any reason to do this!? would the chicken soak up the spices better!? What about soaking chicken in yogurt!?Www@FoodAQ@Com

yes, the citric acid in either fruit will allow the fibers of the meat to loosen which will allow the meat to absorb more of the marinade deeper into the flesh!. Yogurt is also good to use, but this generally allows the surface of the meat to absorb flavors, as well as lend a tangy flavor all by itself!. I use lemon yogurt on various poultry and with a few seasonings, can provide all the flavor required!. Of course, I also use lemon yogurt often as a low fat salad dressing too!. Yogurt is one of those all around good things to cook with!.Www@FoodAQ@Com

I think adding a citrus element to the curry gives it more zing, as usually the chicken itself is more bland, and marinating it in a citrus juice such as lime or lemon really brings the curry dish alive!. I'm not sure yogurt would give it the same zing!.Www@FoodAQ@Com

lemon juice etc!. act as a tenderiser ,and can also add a certain flavour ,i have experimented with raw fish in the same manner ,and it enables the user to eat the fish , with out cooking and it is beautiful,Www@FoodAQ@Com
