I am having problems with shrimp.?!
Every time i attempt to make shrimp fried rice!.!.!.!.well stir-fry shrimp in anyway it always ends up tasting like your sucking on a raw shrimp, ie!.!.its fishy!. What am i doing wrong!? I use frozen, uncooked and still shelled shrimp!.Www@FoodAQ@Com

First, always use IQF (individually quick frozen) shrimp, and make sure the only ingredient on the bag is SHRIMP, no additives, they're meant to maintain freshness, but often the only thing they do is impart an odd flavor if the shrimp are cooked at high temperature!.
Second, make sure you thaw the shrimp inn the bag and then RINSE them and pat them dry, otherwise your only tainting your rice with shrimp slime!.
Finally, if all this fails, make sure you quickly sear the shrimp separately, and the add them back into the fried rice after to reheat!. (If your cooking everything all at once, the shrimp are warming slowly rather than cooking quickly, so your flavoring your dish with a fishy taste of room temperature shrimp than the sweet one of the cooked version!.)
