It goes great in risotto, especially with with a little cheese!. It is also great to stuff chicken breast with a chorizo and tomato mix and some creamy mozzarella!.
It will also go well in enchiladas and burritos!. Or on pizza or quesidillas (spelling!?!?) with roasted peppers!.
You can also use it in omlettes or frittatas!.Www@FoodAQ@Com

i love to fry up the choriza that has been cut into long diagonal slices!. fry them until the oil is just starting to b released from the sausage!. take them off the heat!. get some puff pastry and cut it into squares!. put one slice of chorizo onto the pastry diagonally and fold the corners over!. kinda like a pig in a blanket!. bake them until the pastry is golden!. serve them hot with a nice roast capsicum dipping sauce!. mmmmmmm great to eat while drinking a few beersWww@FoodAQ@Com
Like you, I too am stuck with chorizo as my Latino son in law moved away!. He just fried it up with scrambled eggs and ate it that way!. You could put it in meatloaf or "hamburger helper" type meals when crumbled up!. I didn't buy the hot kind, but it smells like old sneakers to me!.Www@FoodAQ@Com
use a very small amount in a stir fry!. makes all the difference!. Don't use it as a sausage as much as a flovoring, or a thickening agent!. also good for thickening a sauce or chili!.Www@FoodAQ@Com
cook it and combine it with refried beans for luscious tacos!.
cook it and use the grease to fry diced potatoes!.
mix it (raw) with some ground beef for mexican style hamburgers!. top with pepper-jack cheese and avocado!.Www@FoodAQ@Com
