What do i do with fresh olives?!


Question: What do i do with fresh olives!?
I have some olive trees, the olives end up dark purple, but are mostly still green at moment, Does anyone know can i pick them now!? also does anyone know a recipe to bottle them for later please!? Thanks in advance!Www@FoodAQ@Com

The totally ripe olives have become black and are prepared "Greek style"!.
!!!!.!.!. Be sure not to eat them right away!. They are terribly bitter! They have to be prepared to render them edible!.


-- an olive that is picked too early will be tough and have a "wood-like" taste!.
-- usually, the fruit is harvested between eight and six months after blossoming!.!.!.

Greek style black olives :
~ name reserved for black olives (harvested when ripe), processed by light washing to remove bitterness and preserved by sprinkling with salt in barrels turned regularly until the time of use!.
~ the resulting brine must not represent more than 15% of the weight of the olives after treatment!.
Greek-style black olives in jars or cans can be packed dry!. The fruit is wrinkled or creased, somewhat bitter but the flesh is slightly soft and brownish throughout)

Items and ingredients needed:

5 to 6 gallons of fresh picked olives!.
10 heaping tablespoons of 100% Lye!.
Lots of clean clear water that is easily accessible and close by!.
20 tablespoons salt!?
Two 5-gallon plastic buckets, food grade preferred!.
Strong clean wooden stick about 3 feet long and about 1” to 2” thick!. Be sure it has no paint, varnish or any other type materials or chemicals on it!.
Rubber Gloves that fit and have no holes!.

Thuddo, I'm all the way up here in Montreal, and I would die for a 1/2 bushel even!.

Do you know any Italians in your area, or any Italians from the south, period that are from the old country!?

The reason I ask, they have the best recipe to process olives for pickling of sorts!. You mention olives to one of the oldies you have olive trees fully laden, and that's like saying let's go mushroom picking in the woods!.
