Single mother of twin 4 year old boys...recipe ideas please?!
Going to the grocery store in a few hours, and I would like to get all of my groceries for the week at once!. I don't like to cook "big" meals because we almost always throw out at least 1/2 of it!. Kids will NOT eat leftovers!. Kind of tired of hot dogs, sandwiches, tacos, spaghetti and nuggets!. I made baked lemon pepper chicken & velveeta shells today that they loved!. Any more ideas on what to feed them!? School feeds them breakfast, btu I have them for lunch and dinner every day :)Www@FoodAQ@Com

pizza chicken rollups
Ingredients
4 skinless, boneless chicken breasts
20 slices pepperoni sausage
8 ounces pepperoni sausage, chopped
4 slices mozzarella cheese
1 (28 ounce) jar spaghetti sauce
1 pinch garlic powder
salt and pepper to taste
1 teaspoon Italian-style seasoning
Cooking Instructions
Preheat oven to 350 degrees F (175 degrees C)!.
Pound chicken breasts flat with a meat mallet!. Season to taste with garlic powder, salt, pepper and Italian style seasoning!.
Place 4 to 5 slices pepperoni on each breast and top each with a slice of cheese!. Roll up breasts and fasten with toothpicks!.
Fry the pepperoni in a medium skillet until it has released most of its oil!. Remove pepperoni from skillet and set aside!. Brown chicken rolls in pepperoni oil about 5 to 10 minutes each side!. Place chicken in a baking dish!. Combine spaghetti sauce and sliced pepperoni and pour over chicken!.
Bake in the preheated oven for 30 to 40 minutes!.

When I was in college and living in the dorms, we always knew when we were going to have pizza because the night before we'd have ham, corn and brocolli!. And, yes, we had some interesting pizza's that always managed to turn out pretty tasty! Which brings me to my point: leftovers can be converted into great casseroles, pizza, or something wonderful under a pie crust! Consider cutting up left over chicken and adding it to pasta with sauce and cheese!. Tuna casserole can pick up leftover veges!. And, I swear, anything with a can of Campbells Soup in it becomes the stuff of legends!
Other than that, consider:
1!. Individual pizzas made out of pita bread or english muffin halfs!. Top with your favorite pizza sauce, cheese, turkey pepperoni etc!. and you have a nice meal!. Don't forget the veges!
2!. How about breakfast for dinner once in a while!? Pancakes, bacon, or waffles, muffins, scrambled eggs with cheese and so on!.
3!. Cereal won't kill them on off nights
4!. Pot roast with veges cooked in a crockpot!. Serve with mashed potatos!.
5!. A simple favorite: chicken thighs cooked in a non-stick pan until browned, reduce heat and let simmer in their own juices for 20 minutes!. Remove thighs and add 1 1/2 cups hot water to pan!. Bring to a boil and add some butter!. Stir in StoveTop stuffing and fluf with fork to moisten!. Return thighs to pan and place on top of stuffing!. Top with cream of mushroom soup or chicken gravey!. Simmer 5 minutes to heat thru!.
6!. Black bean tostadas with lettuce, tomato, olives, cheese and sour cream!. Serve wtih spanish rice!.
7!. Pork chops with mac and cheese: make up your favorite macaroni and cheese, adding extra milk, a little mustard, and some extra cheese!. Season chops and brown on both sides!. Place on top of mac and cheese!. Saute onion cut into rings until translucent and tender!. Season with salt and pepper!. Divide among the chops, cover and bake at 350 degrees for 45 minutes!. If the kids don't like onions, scoop them off (they're delicious by the way!) and serve the chops and mac and cheese together!.
