Bacon and Mushroom Bite-Size Quiche
Ingredients

* 8 slices bacon
* 1/4 pound fresh mushrooms, chopped
* 1 tablespoon butter
* 1/3 cup chopped green onion
* 1 2/3 cups shredded Swiss cheese
* Pastry for double-crust pie (homemade or purchased)
* 5 eggs
* 1 2/3 cups sour cream
Directions
1!.Heat oven to 375 degrees F!.

2!.On a lightly floured board, roll out the pastry dough 1/ 16-inch thick!.

3!.Using a 3-inch cutter, cut out 42 circles; re-roll scraps as needed!. Fit circles into bottoms and slightly up sides of lightly greased 2 1/2-inch muffin pans!.

4!.Meanwhile, fry bacon slices until crisp, drain; crumble or chop!.

5!.Chop mushrooms, saute in butter until limp and liquid evaporates!.

6!.Combine bacon, mushrooms, green onion and cheese!. Divide filling
equally among muffin cups!.

7!.In large bowl, beat together eggs, add sour cream and stir until smooth!. Spoon about 1 tablespoon into each muffin cup!.

8!.Bake until puffed and light brown, 20-25 minutes!. Cool in pans 5 minutes; lift out!. Serve warm or let cool on wire racks!. If made ahead, wrap cooled quiches airtight, and refrigerate overnight!. Reheat, uncovered, in a 350 degrees F!. oven for about 10 minutes!. Makes 3 1/2 dozen!.

Ingredients

* 1 tsp margarine
* 12 oz tofu, drained
* egg
* 1/2 tsp oregano, crushed
* 3/4 cup shredded lo-fat Cheddar cheese
* 1 tbsp dried minced Onion
* 1 tbsp snipped fresh parsley (opt!.)
* 2 tbsp fine dry bread crumbs
* 2 x egg whites
* 1/3 cup skim milk
* 1/8 tsp garlic powder
* 7 oz can whole kernel corn, drain
* med tomato

Directions

Spread the margarine over the bottom and sides of a 9" pie plate!. Sprinkle with bread crumbs to coat the dish!. Cut up tofu!. In a blender or food processor bowl combine tofu, egg whites, whole egg, milk, oregano, garlic powder, ? cup of the lo-fat Cheddar Cheese, ? t pepper, and 1/8 t salt!. Cover and blend or process till smooth!. Stir in corn and dried Onion!. Pour into prepared pie plate!. Bake, uncovered, in a 350 deg f!. oven for 30-35 minutes or till knife inserted near the center comes out clean!. Cut tomato into thin wedges!. Arrange wedges atop quiche!. Sprinkle with the remaining Cheese!. Bake for 3 minutes more or till Cheese is melted!. * per serving: 212 calories, 18 g protein, 14 g carbohydrates, 10 g fat, 83 mg cholesterol, 411 mg sodium, 254 mg potassium!.

* 2 tablespoons olive oil
* 2-3 large red onions (about one pound total), French-cut (see below)

(Jackie Kennedy’s recipe)

1 prepared pie crust
5 strips lean bacon, fried, crumbled
1 cup grated Swiss (Lorraine) cheese
1 Tablespoon minced onion sautéed in 1 Tablespoon butter
1 cup milk
3 eggs
pinch salt and pepper

Cover the piecrust with crumbled bacon!. Sprinkle Swiss cheese over the bacon, then add the
sautéed onion (spacing it over the cheese)!.
Beat milk in a bowl with the eggs, salt and pepper!. Pour over other ingredients in the pie pan!.

Bacon and Spinach Quiche

Ingredients
6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Directions
Preheat the oven to 375 degrees F!.

what the others have said is right, you can also add some ingredients that you like aswell, you will need the peoper dish with curved edges though for it to work and bake well!. there cheap enough on this site!.Www@FoodAQ@Com
