What a recipe says "3 cups milk, divided" what does the divided mean?!


Question: What a recipe says "3 cups milk, divided" what does the divided mean!?
I found the recipe below and you will notice it calls for 3 cups milk divided and then 3 cups milk further down!. Does this mean I will need 6 cups total, 1-1/2 for the cream sauce!.!.!.1-1/2 for using in the blender!.!.!.and 3 cups when combining everything!?

4 large potatoes, peeled and quartered
2 medium carrots, peeled and sliced
1 medium onion, quartered
1 (14-ounce) can vegetable or chicken broth
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk, divided
1 1/2 cups shredded sharp cheddar cheese
1 tablespoon dill weed
1 cup sour cream
3 cups milk
Salt and pepper to taste
1/4 teaspoon chili pepper or to taste

In a large soup pot over medium-high heat, add potatoes, carrots, onion, and vegetable or chicken broth!. Cover and simmer 15 to 20 minutes or until vegetables are tender when pierced with a fork!. Remove from heat!.

While vegetables are cooking, make cream sauce!. In a medium saucepan over medium-high heat, melt butter; add flour, stirring constantly until mixture is smooth and bubbly!. Add milk and bring to a boil, stirring constantly, until thickened!. Remove from heat!. Add cheddar cheese and dill weed!. Stir until cheese is melted!. Set aside!.

In a food processor or blender, in small batches, puree potato mixture with some of the milk!. Pour blended potato mixture back into the soup pot!. Add the cheese sauce, sour cream, remaining milk, salt, pepper, and chili pepper!. Stir until thoroughly blended!. Return to medium heat and heat until warm!. Wow!. Badly written recipe!. But fairly easy to figure out!.!.!.

When I make a cream gravy/sauce, I use the rule of three (3 tbsp butter, 3 tbsp flour, 3 cups milk), and it tends to turn out perfectly!.

When pureeing the vegetables, add just enough of the remaining 3 cups to make it just slightly more 'soupy' than mashed potatoes (I would guess about a cup)!. Add the remaining 2 cups in the last step!.Www@FoodAQ@Com

"divided" after an ingredient is your clue that the total amount of the ingredient needed for the recipe is given, but that thru the course of the recipe, it will be used in 2 different measurements, usually at 2 different times!. For example, "3 cups sugar, divided" may mean 2? cups of sugar goes in the dough instelf, and the remaining half cup of sugar is then sprinkled on top at the end!.Www@FoodAQ@Com

It means that you divide the 3 cups in half and use the first 1 1/2 cups for the first part of the recipe when it calls for adding milk and then you would add the second 1 1/2 cups to the recipe when you come upon the latter part of the recipe asking you to" puree potato mixture with some of the milk!."Www@FoodAQ@Com

It means to divide the milk into 2 parts!. Use 1 1/2 cups for the white sauce and enough to make it easy to puree the potatoes!. Then add what is left to the the soup with the rest of the ingredients!.Www@FoodAQ@Com

You've got sour cream, cheese, 3 tablespoons butter and all that milk!.!.!.!.You want to go with a bang, right!?
with all that flour and potato, you will need at least six cups of milk anyway otherwise you will have porridge!.Www@FoodAQ@Com
