If you've got wild Pacific Salmon, presumably it's fresh!. If that's the case there's a very good chance it's Chinook Salmon!. If so, this is the best tasting of all the species of Salmon!.

Normally I would say go the cedar plank route with paprika, brown sugar salt & pepper, however if you've got fresh wild Chinook don't cover it up with all that!.

Enjoy the finest of the finest simply prepared!. Grill with Salt, Pepper and a little lemon!. Oh and don't forget the Pinot Noir for this once a year feast!Www@FoodAQ@Com

I LOVE it! I usually grill my Salmon on a cedar plank with either a 'Potlatch' rub or with lemon slices and a LITTLE fresh dill!. It is great!

Potlatch Seasoning

put aluminum foil across the bottom of a cookie sheet and put a light coat of olive oil, put washed salmon fillets or steaks on the pan then cover with a mix of bread crumbs, chopped fresh basil, chopped garlic, parmesan cheese, olive oil, salt and pepper!. then take either cherry tomatoes or halved bigger tomatoes (beefsteak or plum usually) and put them on the cookie sheet chopped side up with the same mix shown above!.!.!.broil in the oven until the bread crumbs on top of the salmon are a medium brown (you should really try this recipe, its great)Www@FoodAQ@Com

Here where i live coho reine supreme !. we , in our town are known as " the Salmon Capital of The World " !.
A huge fishing derby every year that brings tourist to fish for " the Big One " , & hope to win the 25,000 prize !.
After , the huge salmon's are cooked on grates over open fire to perfection !. also we have a large aboriginal community here & the smoked salmon is literally " to die for " !. pure heaven !.
