Any cake recipe can be made into cupcakes!.

Place cupcake liners in muffin tins and fill them 3/4 full until the batter is used up!. Bake at the same temperature as the cake recipe and check after 15 minutes to see if they're done!.

Part One
? 1 cup coca cola or other cola drink
? 1/2 cup butter

? 2 cups sugar
? 1 teaspoon baking soda
? 1 teaspoon vanilla
? 1 cup buttermilk
? 2 large eggs, beaten

Part one

Part two

Ingredients? 1 1/4 cups all purpose flour

? 12 egg whites from large eggs ( enough for 1 1/2 cups)

Angel Food Cupcake Recipe DirectionsPreheat oven to 350 degrees!. Line cupcake pans with paper liners!.

Place egg whites in a large mixing bowl and beat at high speed until egg whites are frothy, approximately 1 minute!.

Add cream of tartar, salt and vanilla to egg whites!. Mix at high speed until egg whites are almost stiff, approximately 4 minutes!.

ICE CREAM CONE CUPCAKES

1 package dry cake mix (any flavor)
24 cake cup ice cream cones
water, oil and eggs per cake mix directions on box

Preheat oven to 350F!.
Mix cake mix per directions on box!. If using a white cake mix, divide mix into four separate mixing bowls and use food coloring to make different ice cream "flavors"!.

Place ice cream cones in muffin pan and fill about 1/2 to 3/4 full!.

Bake 15 to 20 minutes or until done!.

Cool on a wire rack!. Let cool completely if frosting!.

Makes 18 to 24 cupcakes

AND

BLUEBERRY CUPCAKES

1 1/4 cups flour
2 cup sugar
1 3/4 teaspoons baking powder
1/4 teaspoon salt
1/3 cup butter
1 egg, beaten
3/4 cup milk
1/2 teaspoon vanilla
2/3 cup blueberries
1/3 cup chopped unblanched almonds, toasted

Sift dry ingredients together to mix well!. cut in the butter until mixture resembles coarse crumbs!.
Whisk egg vigorously to incorporate air and make the eggs light!. Stir in egg, milk and vanilla and combine thoroughly!. Add to dry mixture and stir together (some lumps should remain) and add the blueberries!.

Fill well greased muffin tins with batter until two thirds full!.

Bake in a pre-heated 350 degree oven for 20 minutes or until done!.

Makes 18 large muffins

OR

CARROT CAKE - CUPCAKES

CAKE:

2 c!. sugar
1 1/2 c!. vegetable oil
3 eggs
2 tsp!. vanilla
2 1/4 c!. flour
2 tsp!. cinnamon
2 tsp!. baking soda
1 tsp!. salt
2 c!. coconut flakes
2 c!. carrots, shredded
1 (8 oz!.) can crushed pineapple (do not drain)
1 c!. walnuts, chopped (optional)

Mix first 4 ingredients in a bowl with a wooden spoon!. Mix together next four ingredients and add to first 4 ingredients!. Add last 4!. For cake use 9 x 13 inch greased pan!. Bake at 350 degrees for about 50 minutes!.

FROSTING:

6 oz!. cream cheese
1/2 c!. (1 stick) butter
1/4 c!. milk
2 tsp!. vanilla
1/4 tsp!. salt
3 to 4 c!. powdered sugar (or more if needed to achieve desired consistency)

NOTE: I usually make at least 1 1/2 times the amount called for in the frosting recipe to ensure good coverage!.
For Cupcakes: Use cupcake liners with cupcake tins!. Bake at 375 degrees for 15 to 20 minutes!. Makes 25 to 40 cupcakes (possibly more)!. Let cool before frosting!.

OR

CHEESECAKE CUPCAKES

Graham cracker crust mix

CHEESECAKE:

24 oz!. cream cheese
1 c!. sugar
1 tsp!. vanilla
5 eggs

TOPPING:

1 1/2 c!. sour cream
3/4 c!. sugar
1/2 tsp!. vanilla

Make graham cracker crust and pack down in bottom of cupcake liners!.
Cream together cream cheese, sugar and vanilla!. Add eggs one at a time!. Spoon into cupcake liners until almost full!. Bake 30 minutes at 300 degrees!. Remove from oven, cool 5 minutes!.

Mix topping ingredients!. Fill indentation in cupcakes and smooth on top!. Return to oven for 5 minutes!. Remove from oven and cool!.

Makes 2 dozen regular size cupcakes

OR

APPLESAUCE CUPCAKE

2 c!. Bisquick
1/4 c!. sugar
1 tsp!. cinnamon
1/2 c!. applesauce
1/4 c!. milk
1 egg
2 tbsp!. cooking oil

TOP CUPCAKE AFTER BAKED:

1/4 c!. sugar
1/4 tsp!. cinnamon
Melted butter

Mix all of the above ingredients together!.
Grease small cupcake pans!. I use four pans, divide the above into the pans!. Cook at 400 degrees for 12 to 15 minutes until brown!.

Remove and dip tops into the melted butter and then the cinnamon mixture while hot!.

OR

BLACK BOTTOM CUPCAKES

1 (8 oz!.) pkg!. cream cheese
1/3 c!. sugar
1/8 tsp!. salt
1 lg!. egg
1 c!. chocolate chips

CUPCAKE BATTER:

1 1/2 c!. flour
1 c!. sugar
1/4 c!. cocoa powder
1 tsp!. soda
1/2 tsp!. salt
1/3 c!. vegetable oil
1 tbsp!. vinegar
1 tsp!. vanilla

Preheat oven to 350 degrees!. Prepare filling - softened cream cheese!. Add sugar and salt!. Add egg and beat well!. Stir in chips and set aside!. Make cupcake batter!. In large bowl dump flour, sugar, cocoa, salt, and soda!. Add oil, vinegar, vanilla and 1 cup tap water!. Beat well!.
Spoon cupcake batter into cupcake papers in muffin pans, 2/3 full!. Drop a dollop of filling on top of each!. Bake for 20 minutes and remove from oven!. Cool on wire racks, mini ones may cook faster!. Makes 16-18 regulars, or 40 mini's!.

OR

BUNNY CUPCAKES

Cupcakes baked in cupcake liners
White ready-to spread frosting
Flaked coconut
Red or yellow food color
Lady fingers
Red or yellow jelly beans
Red hot candies
Red licorice laces

Frost cupcake with white frosting; piling high to form a rounded top!. Dip into coconut to coat frosting!. Tint a portion of frosting with food color to make a light pink or yellow!. Spread a thin layer of frosting on the cut sides of two lady fingers!. Make two slits near the edge of the cupcake and insert lady fingers for ears!.
Secure in an upright position with wooden picks!. Add jelly bean (1/2) for nose and red hot candies for eyes!. Cut laces into six 1 1/4 inch pieces!. Add for whiskers!. Refrigerate to set frosting!. Remove picks before serving!.

CHERRY CHEESE CUPCAKE

? 1/2 cup shortening
? 3/4 cup water
? 2 large eggs
? 3/4 cup milk
? 1 teaspoon vanilla
? 4 ounces melted unsweetened baking chocolate

Directions:

-Preheat oven to 350 degrees!. Line cupcake pans with paper liners!.
-Combine all ingredients into large mixing bowl!. Mix at low speed for 30 seconds, and scrape bowl!. Mix at high speed for 3 minutes!.
-Fill liners 1/2 to 2/3 full of batter!. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean!.
-Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely!.
-Frost when chocolate cupcakes are completely cool!.
