Clam Chowder.... Red or White?!

Question: Clam Chowder!.!.!.!. Red or White!?
I've got my favorite but I'm not telling yet!. What's yours!? Why!? Do you have a great recipe!?Www@FoodAQ@Com

Answers:
White!. Red is an abomination unto the Lord!. Has to be made from fresh clams with all the juice you can get out of them (fresh mussels are great, too)!. Using canned clams is also an abomination!. And heavy cream, real butter, good waxy potatoes and lots of celery!. Top with fresh ground pepper (not ground from the shaker- yuk)!.Www@FoodAQ@Com

I made an awesome white and I really don't like red chowder!. It's all in the flavoring!.

I don't remember the exact recipe, as that doesn't matter!. I drained (and saved the liquid) to two cans of chopped clams and one can of clam sauce (the wine kind that has clams in it)!.

I saute'd onion in butter and made a rue from that!.

Then I made a rue/gravy using the reserved liquid to thicken the butter/flour paste at bit and added milk and small diced potatoes!.

Lastly, I added some chicken boullion and the clams, salt and pepper!. It was pretty simple as I just used my taster (tongue) to tell when it was the right consistancy and flavor!. I used 7 different recipes to come up with my own!.
