Question: I really think i want to be a candy maker and need some help!?
Today i made my first batch of hard candy!. I use food coloring and no flavor as i have to order it online!. It came out ok!.!.kinda lite, not as hard as a sticky lolly pop and not as lite as a candy cane!. I dont have a hook on the wallso I was pulling/turning it by hand on the counter!. But it cooled way faster then i thought it would!. Im just doing small batches at a time 3cups suger, 1 cup corn syrup, 1/4 water!.
I tried puting it in the oven at 200degres to keep half of it while I shaped the other half!. And it worked for a little while, but then it just stated geting cracked and like cooked!.!.

2/3 cup light corn syrup
3/4 cup hot water
Food coloring
[edit] StepsPour 2 cups sugar, 3/4 cup light corn syrup, and 3/4 cup hot water in a small saucepan!. If you're using a candy thermometer, (which is highly recommended) make sure that the pan is small enough for the bulb to be submerged in the solution!.
In a large saucepan, combine the sugar, corn syrup and water!. Stir over medium heat until the sugar has dissolved, about 5 minutes!. Without stirring, let the mixture come to a boil which should be about another 5 minutes,
Now Raise the temperature to high as it boils!.
Watch your thermometer until the temperature is at exactly 300 degrees!.(if you do not have a candy thermometer you can fill a glass with really cold water then take a drop of the candy liquide and if it solidifies in the shape of a ball and floats to the surface then its ready for next step)!.
Remove from heat and cool until the sugar stops boiling (but is still very hot) add a dram of flavoring oil and several drops of your choice of food coloring or Kool Aid !. Mix quickly!.
Pour the molten sugar onto a greased cookie sheet!. Allow it to cool!. Spread the mixture around the sheet!.
After the sheet cools (30 minutes - an hour), break up the candy into several pieces and dust with powdered sugar!.



[edit] TipsThis candy is best stored in paper bags or metal tins for a fun snack or a quick sugar craving!.
Mix food coloring to make fun shades!. Try adding the color after stirring in flavor and stir lightly for a swirled effect!.
Use a candy thermometer, because your candy is likely to "sugar" if you use conventional methods!.
If you don't have a thermometer, use a spoon to drop tiny amounts of molten sugar into ice water every few minutes!. When the drops form hard threads or balls that you can bend and is not sticky, remove from heat!.
After you remove the sugar from heat, the temperature will continue rising but that is not a problem if you took it off the heat at 300 degrees!. You may remove the thermometer, and stir flavor in quickly!. Put on cookie sheet or candy molds!.
The powdered sugar is to keep the pieces from sticking together and becoming a large, sharp lump!. If you like the effect of the colors without the powdered sugar, make sure you store the pieces on pieces of wax paper and not touching one another!.
Mix flavors or Kool Aid or pour over dried fruit for an added texture!.
Try pouring into candy molds or mini muffin pans instead for a consistent shape!.
