BLEU & BACON STUFFED CHICKEN BREAST

boneless chicken breast
red bell pepper
sweet onion
celery
bacon
bleu cheese dressing (ranch works well also)
shredded mozzarella cheese
brown sugar
paprika
seasoned salt
ginger
tooth picks

Butterfly boneless chicken breast!. Rub inside with olive oil and brown sugar!.
Fill inside of each with 2 tbsp!. mixture of finely diced red bell pepper, celery and sweet onion!. Place one strip of bacon in center, leaving one end hanging out!. Fold chicken over and fold bacon end over the top!.

Wrap entire breast with bacon and pin with tooth picks!. Coat with bleu cheese dressing and refrigerate for an hour or so, occasionally brushing with dressing!.

Sprinkle with paprika, seasoned salt and a pinch of ginger!.

Grill topside down first until done!. Turn over and cover top with shredded mozzarella cheese,

Cover the grill and cook until chicken is done and cheese is melted!.

2 boneless skinless chicken breasts
1 small package chopped spinach (freezer section looks like a block)
4 baby portabello mushrooms chopped
1/4 small onion chopped
2 cloves garlic minced
1/4 cup heavy whipping cream
3 oz!. cream cheese at room temperature
2 tbsp butter
salt and pepper
1 cup bread crumbs or for low carb buy a can of the frenchs onion toppings and smash them in a bag to make them crumbs

Place the chicken breast in a ziploc bag and pound until it is 1/4 inch thick!. Set aside!.

In a saute pan melt the butter!. Add the onions mushrooms and garlic and cook on medium high heat for 3 minutes!. Add the spinach and heavy cream and stir to mix!. Add the cream cheese and continue stirring until the cream cheese has melted!. Add the shredded cheese and stir and remove from heat!. Salt and pepper to taste!.

Lay your chicken breasts on a plate and divide the spinach between both breasts filling one side to make it look like an omelette!.

Fold the empty side over and press down!.

Pour the breadcrumbs on a plate and carefully place stuffed chicken on plate making sure to add bread crumbs to top and bottom without spilling the filling out (its easy I promise)

Then place chicken on a buttered backing sheet and bake on 350 for 30 minutes or until the chicken is no longer pink!.

You can also do the same but spread the chicken with mayo, then top one side with a slice of swiss, then a slice of ham, then swiss again, fold over, bread, and bake!.Www@FoodAQ@Com

**Southwestern Chicken & Tater Tot Medley**

1 package (32 ounces) Tater Tots
1 pound boneless skinless chicken breast, cooked and cubed
1 can (2 1/4 ounces) sliced ripe olives, drained
1 can (15 ounces) yellow corn, drained
1 cup medium chunky salsa
1 cup prepared ranch salad dressing
1 medium onion, chopped
2 cups shredded cheddar cheese

In a large mixing bowl, combine first seven ingredients!. Spoon into a greased 13-in!. x 9-in!. x 2-in!. baking dish!. Bake at 450 degrees for 30 minutes!.
Sprinkle with cheese; bake until cheese melts and casserole is hot, about 5-10 minutes!.Www@FoodAQ@Com
