Pasta e Fagioli ("Pasta Fazool") or ("Pasta Fazule")

2 cups kidney beans
1/4 pound salt pork, diced
2 onions, chopped
2 cloves garlic, minced
1 tablespoon salt
1/4 teaspoon pepper
2 bunches escarole
1/2 pound noodles or macaroni, broken

Wash and pick over beans!. Soak overnight in cold water!. Drain and cover with two quarts of fresh water!. Cube salt pork and saute with onions and garlic until golden, then add to the beans with the seasonings!. Cover and simmer two hours or until the beans are almost tender!. Add escarole, washed and chopped, and enough boiling water to cover!. Next mix in the noodles, or use the macaroni, broken into inch lengths, and cook until the greens tender!. At this point the noodles should be al dente, meaning cooked just sufficiently firm to be felt "under the tooth!." Yield: six portions for six hungry men!. INGREDIENTS (Nutrition)
3 cloves garlic, minced
1 onion, chopped
1 carrot, finely chopped
2 tablespoons chopped fresh parsley
2 teaspoons dried basil
1 teaspoon dried oregano
4 tablespoons olive oil
1 (14!.5 ounce) can whole peeled tomatoes
2 cups cooked cannellini beans, drained and rinsed
8 ounces macaroni
2 tablespoons butter
1/4 cup grated Parmesan cheese
salt and pepper to taste

DIRECTIONS
In a large skillet, saute garlic, onion, carrot, parsley, basil and oregano in olive oil until onions are tender!.
Add the tomatoes plus 1/4 cup of the can juices and the salt and pepper!. Cover and stir frequently, simmering for 10 minutes or until vegetables are tender!. Add the cannellini beans and cover!. Simmer for 20 minutes!.
Cook macaroni according to package directions, drain and toss with butter and Parmesan cheese!. Add to cannellini bean mixture!. Serve immediately with additional Parmesan cheese, if desired!.Www@FoodAQ@Com
