Cooking with chicken..... ?!


Question: Cooking with chicken!.!.!.!.!. !?
Okay, I've got some chicken breasts that I would like to bake tonight, but am looking for a bit of a different way to cook them!.!.!. I thought maybe I would butterfly them and stuff them with mozzarella cheese and maybe put some chopped tomatoes and breadcrumbs, thyme/rosemary on top, but I'm just not sure!.!.!. ANy ideas that you guys have as to what I could make and the recipe or oven temps and such would be GREAT! I've got every herb you can think of and if I don't have it I might just be willing to go to the store if it sounds great! Thanks and I look forward to your answers!Www@FoodAQ@Com

STUFFED CHICKEN BREAST SALTIMBOCCA

4 chicken breasts, split, boned and pounded
8 slices Prosciutto or baked ham
4 slices Mozzarella
2 tomatoes, chopped and drained
1 tsp!. sage
1/2 c!. dried bread crumbs
3 tbsp!. Parmesan cheese
3 tbsp!. chopped parsley
4 tbsp!. butter, melted
Parsley sprigs

Place chicken breasts skin side down!. Top each with slice of ham followed by a half slice of Mozzarella!. Sprinkle with tomato and sage!. Roll up each breast and secure with toothpick!. Combine bread crumbs, cheese and parsley!. Dip each breast in butter!. Dip in bread crumb mixture!.
Arrange seam side down in single layer, oven-proof baking dish!. Bake in preheated 350 degree oven for 40 to 45 minutes!. Garnish with parsley and serve immediately!.Www@FoodAQ@Com

Italian Stuffed Chicken Breasts

4 skinless, boneless chicken breast halves
salt and pepper to taste
1 (15 ounce) container ricotta cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 clove garlic, minced
2 eggs, beaten
1 (8 ounce) package shredded mozzarella cheese, divided
1 (16 ounce) jar spaghetti sauce

Preheat oven to 350 degrees F (175 degrees C)!.
Season chicken breasts with salt and pepper to taste!. Slit open on the side for stuffing; set aside!.
In a medium bowl, combine the ricotta, spinach, garlic, eggs and 3/4 of the cheese!. Mix well and stuff each breast with 1/4 of the mixture; secure with toothpicks and place stuffed breasts in a lightly greased 9x13 inch baking dish!. Pour sauce over all and sprinkle with remaining cheese!.
Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until chicken is cooked through and juices run clear!.
Serve over spaghetti!.

put chicken breasts in bottom of casserole - 8 x 8 in or so
cover with lots of diced tomatoes - your fave herbs crushed or cut finely, and can or 2 of tomatoe sauce (not paste)
cover with lots of mozarella and bake at 350 degrees for 45-50 minutes!. that's it!.
cut so each serving has a breast in it, serve over favorite cooked pasta - penne, angel hair, etc!.
if it starts to brown too much, cover with foil!. great with side salad or garlic bread!.
actually every time i've made this people think it's gourmet!Www@FoodAQ@Com

Try making that chicken hot like with Cajun cooking!. Spice it up!.Put colorful peppers over and around it and roast it in foil in the oven!. Pls make sure the core temperature reaches 170 F so ppl that eat it do not get sick!.Www@FoodAQ@Com

Chicken Cheese Rolls
The Crow's Nest at Buckeye Lake B&B
(This dish can be prepared ahead, refrigerated, then baked just before serving!.)
3 large boned and split chicken breasts
3 oz!. whipped cream cheese with chives/divided
1 Tbsp!. butter or margarine/divided
6 slices of bacon
Place split breasts between waxed paper!. Pound to 1/2 inch thickness!.
Spread each with 3 Tbsp!. of cheese mixture!. Dot with 1/2 tsp!. of butter!.
Fold ends over!. (filling - some will ooze out during baking)!.
Wrap one slice of bacon around each roll!. Place seam side down in shallow baking pan!.
Bake on top rack in 400 oven for 40 minutes or until chicken is tender and juice runs clear!.
Broil until bacon is crisp and golden!.
Makes 6 servings!.


Kelly, in this recipe, boneless skinless is best!. After you pound it out, the skin wouldn't cover it anyway!.Www@FoodAQ@Com
