libbyami gave you a very good answer!. The only thing I wanted to add is that you can use other liquids besides water and vanilla!.
If you are making a cake like Lemon Poppyseed Cake, you can use the powdered sugar, a little butter and lemon juice plus a little water!. You can use fruit juice instead of the water with the powdered sugar as well and substitute almond extract or coconut extract in place of the vanilla!. Depending on the thickness of the glaze, you can have it clear on your cake or white!.
When I use a yellow cake mix, I drain the juice and use it in place of the water in the cake!. I lightly puree the fruit so it has small pieces (either peaches, pears, fruit cocktail - canned)!. I use half the fruit in the cake along with the ingredients listed on the cake box, mixing the fruit in at the end just before pouring into the pan!. Then as soon as the cake comes out of the oven, I poke it all over and pour a glaze made with powdered sugar, the rest of the fruit and water (there is a little juice in with the fruit) over the cake!. It makes the most moist cake I've ever had!.
Enjoy!Www@FoodAQ@Com
