STUFFED PIZZAS
1 recipe Pizza Crust Dough (recipe follows)
1/2 lb!. ground beef OR sausage
1 c!. onion, chopped
1 clove garlic, minced
1/2 c!. green pepper, chopped
2 med!. tomatoes, chopped
1/3 c!. tomato paste
1 tsp!. dried basil
1/2 tsp!. salt
1/2 tsp!. each - thyme & oregano
3 tbsp!. water
1 1/2 c!. Mozzarella cheese, shredded
1 egg, beaten with 1 tsp!. water
PIZZA CRUST DOUGH:
2 1/2 - 3 c!. flour
1 pkg!. dry yeast
1 tsp!. salt
1 c!. warm water (115-120 degrees)
2 tbsp!. cooking oil
In bowl, stir together 1 1/4 cups flour, yeast, salt, water and oil!. Beat on low 30 seconds and on high 3 minutes!. Stir in as much of remaining flour as possible with spoon!. Knead in remaining flour to make dough smooth and elastic!. Cover and let rise until double (1 hour)!.
Brown meat, onions, garlic and green pepper!. Drain fat!. Stir in rest of ingredients, except cheese and egg!.
Divide dough in 6 pieces!. Cover!. Let rest 10 minutes!. Roll each into 8 inch circle on floured board!. Spoon 2/3 cup meat mixture onto half of each circle!. Sprinkle with 1/4 cup cheese!. Moisten edge of dough with egg mixture!. Fold in half and seal edge by pressing with fork tines!. Prick tops with fork!. Brush with remaining egg mixture!. Bake on greased cookie sheet at 375 degrees for 30-35 minutes!. Serves 6!.

2 tbsp!. sugar
4 1/4 to 4 1/2 c!. flour
FILLING:
1 1/2 lbs!. Italian sausage
1 med!. onion, chopped
1 med!. green pepper, chopped
16 oz!. Mozzarella cheese, grated
8 oz!. can sliced mushrooms, drained
10 to 12 sliced black olives
Pepperoni to taste
TOPPING:
28 oz!. can Italian style tomatoes, drained
1/2 tsp!. Italian seasoning
1/4 tsp!. fennel seed
6 oz!. can tomato paste
1/3 c!. grated Parmesan cheese
Dissolve yeast in lukewarm water!. Add shortening, sugar and salt!. Stir in 2 cups flour, add enough more flour to form a soft dough (all the flour may not be used)!. Knead until smooth and elastic, working in more flour as needed!. Knead 5 minutes (can be done in bowl)!. Divide dough into thirds!. Cover and set 1/3 aside!. Roll 2/3 of the dough into a 14 inch circle!. Brush a 12 inch pizza pan (2 inches deep) lightly with oil!. Press evenly over bottom and up sides!. Remove sausage from casing and crumble!. Cook over low heat about 10 minutes!. Drain and set aside!. Saute tomatoes (break up with fork or put in blender), tomato paste, and spices 10 minutes or until thick!. Roll remaining dough into a 12 inch circle!. Sprinkle sausage over bottom crust!. Dab 1/4 of tomato sauce over sausage!. Place pepperoni on top, add onion and green peppers!. Top with Mozzarella cheese, mushrooms, and black olives!. Set the 12 inch circle crust over top!. Crimp edges of top and bottom crust to seal!. Prick top crust with sharp knife!. Spread tomato sauce over top!. Sprinkle with Parmesan cheese!. Bake at 425 degrees 40 to 50 minutes or until crust is golden!. Watch carefully during last minutes!. 3/4 c!. COLD water
Tomato sauce of choice
Toppings as desired (olives, cheese, etc!.)

Combine Bisquick and water!. Dust board lightly with Bisquick!. Divide dough in two parts; (1/3 and 2/3)!. Roll 2/3 of dough into a 16x14 inch rectangle!. Fold in thirds!. Unfold in a 9x13 inch pan that has been sprayed with no stick!. Press down bottom and up the sides!.
Spoon on a generous amount of tomato sauce of your choice!. Microwave or saute the onion and garlic together, then add the seasonings as desired and Prime steaks!. Place on top of sauce!. Add more toppings as desired (olives, cheese, etc!.)!.
Roll out top crust to 9x13 inch!. Place on top of layers!. Seal edges!. Pinch off excess crust!. Spread more sauce on top and sprinkle with Parmesan cheese!.
Bake at 450 degrees for 5 minutes (or until light goes out) then turn to 400 degrees!. Bake a total of 18-20 minutes!. Watch so it doesn't get too brown or dry!.

Make a crust 2 inches larger diameter than needed and put long thin slices of cheese 1/2 inch from the end!. Keep the cheese thin (thickness of a pencil)
