Have you ever had popovers!? They are delicious and will give you something new to try if youve never had them!. Here is a great basic recipe!.

Popovers

Servings: 6

"Following this recipe, you 'll get a big, puffy light creation from flour, eggs, milk and salt!. The secret is a very light touch in mixing and a very hot oven for baking!. These are best served hot from the oven!."

Ingredients:
2 eggs
1 cup all-purpose flour
1 cup milk
1/2 teaspoon salt

Directions:
1!. Preheat oven to 450 degrees F (230 degrees C)!. Grease and flour six 6-ounce custard cups!.
2!. In a medium bowl beat eggs slightly, Beat in flour, milk and salt until just smooth; being careful not to overbeat!. Fill custard cups 1/2 full!.
3!. Bake at 450 degrees F (230 degrees C) for 20 minutes!. Decrease oven temperature to 350 degrees F (175 degrees C) and bake for 20 minutes more!. Immediately remove from cups and serve piping hot!.

Basic Homemade Biscuits

2 cups sifted all-purpose flour
1 teaspoon salt
1 tablespoon sugar
4 teaspoons baking powder
1/3 cup lard (or shortening)
1 1/4 cups milk (you can also use buttermilk or sweet milk)

Preheat oven to 450°F!. Sift together dry ingredients in a large bowl!. Sifting is important, it helps loosen up the flour so the lard and milk mix into the flour quicker with less kneading!. Cut in lard with a pastry blender or a couple knives!.

Once you cut in the shortening or butter into your flour mix, stir in milk only until distributed!. The dough should be sticky!. You want your dough to be as moist as possible, yet able to retain its shape!.

Dump your biscuit dough onto a lightly floured surface!. Fold the sides of the dough gently towards the center of the dough!. Flour the surface again and flip the dough!. Fold one more time, very gently!. Then flip the dough and press out with your finger to the desired thickness and cut out rounds!.

If dough if is too sticky to roll out, you can pinch off individual pieces of dough and shape each piece with floured hands!.

For crusty biscuits, place biscuits on a greased baking sheet 1" apart!. For softer biscuits, place biscuits in a large casserole dish with the sides touching!. Bake for 10-12 minutes!. Brush tops with butter for a brown finish, if desired!.

8oz pork sausage, 1 can dried beef, or 1 package bacon
2 tablespoons all-purpose flour
2 cups milk
Salt & pepper, to taste

Brown sausage over medium-high heat in a heavy skillet until cooked thoroughly!. I buy pork sausage in 16oz packaged rolls!. I cut it in half and freeze the half I don't use for later!. If you are using dried beef, rinse salt off each piece and chop into pieces!. You can cook bacon in the microwave on a paper towel, about 45 seconds per slice!.

Remove sausage from skillet with a slotted spoon or spatula!. Crumble bacon into small pieces!. Leave about 1-2 tablespoons of fat in the skillet!. If you used dried beef you will need to add a couple tablespoons of lard, shortening or butter; heat until it melts!.


Continue to heat skillet over medium-high heat!. Add flour to fat in skillet and whisk together until smooth!. Continue whisking and cook for 1 minute!. Slowly pour in milk whisking constantly!. Bring to a boil and then reduce heat to simmer!. Cook, while whisking, for about 2 minutes!. Add sausage, bacon or beef to gravy and stir to evenly distribute!. I use the Pilsbury Grands buttermilk southern style and they are as good as what I can make from scratch !.
One thing about the gravy though even though you didn't ask and I hope you don't mind !.
Instead of regular milk, use 1 can of evaporated milk and one regular !.
It truly makes a world of difference and I have received more compliments on my gravy than I can count !. An of course salt is important to bring out the taste of it regardless of what kind of milk you use!.!.!.otherwise it tastes very bland !.Www@FoodAQ@Com

I try to keep a bag of the Mary B's or the pillsbury brand frozen biscuit
dough in the freezer so I can have them whenever I want them without the work!. They are ready to pop in a 450 degree oven for about 15-20 minutes!. People think I slaved over them!

If you don't have buttermilk, use regular milk with 2 tbs of lemon juice added to it!. Let it sit for a few minutes and chill well!.Www@FoodAQ@Com

Pilsbury!. That's the answer!. Awesome biscuits that taste pretty much like homemade and take like 1/3 the time!. There's always Bisquick!. The box tells you how to make them that way!. But I still think Pilsbury is better!.Www@FoodAQ@Com

The easiest way to make home made biscuits is to use bisquick!. Combine the Bisquick mix with milk!. Roll out dough, cut biscuits and bake!.Www@FoodAQ@Com
