That depends!. When I was growing up we always had a ham for Easter, ( and a turkey and a leg of lamb and lasagna!! ) but we never ate ham as an entree!. It was always just something that we might have had a slice of along with our dinner!. Then sandwiches and snacks all week! I would serve a hen on each plate, and have the ham on the table for "self service"

The ham would probably be plenty!. One cornish hen would not be enough for 4 people -- usually if you are only serving cornish hens, and no other meat, you would allow one cornish hen per person!.
I think the ham, along with a potato dish (or other starchy dish) and a vegetable dish, and of course hot rolls and butter would be a great meal!.Www@FoodAQ@Com

I think you are thinking about a "capon" hen!. Cornish hens are very small and one per person is usually served for a dinner!. Capons are much larger, but would not feed 4 people unless you are baking ham too!.

Consigli, unless you like leftovers, I would do or one or the other!. Unfortunately I went out a bought some grain fed free range spatch cocks, only to find I have been rostered on to work!. Darn hard luck isn't it!? lol

you would have to make 4 (or at least two if you cut them in half) but that would be nice!. What I am doing is cooking a turkey breast and making some gravy ahead of time so it is not too much of a hassleWww@FoodAQ@Com
