Why won't my white chocolate melt?!
I tried the double boiler and microwave and it just globes up!.!.!.what can I do!? I'm using ghiradelliWww@FoodAQ@Com

First of all white choc really does'nt have much to do with choc at all- it's mostly veg fat , sugar and other things!.
In a pyrex bowl, put your choc white or otherwise, chopped up into small pieces is best!. Don't know how much you are using but let's say 1-2 cupsof chopped choc!. To that add, 1-3 tablespoons of butter, and MW for 20- 30 seconds max!. take it out stir it, and then MW again for 20 sec!. max!.
Do this maybe 1 more time and you should be OK!. The warmth from the bowl will eventually incorporate the last few pieces into a thick liquid!.
This also works with Heavy Cream ( don't use milk), or sometimes Evaporated milk in the can!. Use 2 or three tablespoons!.
If you still have problems put the bowl over, (not in) a pot with very hot tap water!. Let it sit, and stir every few minutes!.
Adding water will coagulate the choc and you'll have a mess!. good luck!.Www@FoodAQ@Com

Okay, I melted some Ghiradelli white chocolate very recently, and I've used it a lot before!. I've also ruined it a few times messing with it at home so I know what I'm talking about!. Some chocolate will melt just fine if you have your water at full boil, but this brand should only be melted over water which is just barely simmering and releasing a small amount of steam!. If you're double boiler water is boiling it will clump up!. also make sure your water isn't touching the bowl!. also, if you get even a tiny amount of water in your chocolate it will be destroyed, so be extremely careful!. Even if your water isn't that hot it won't take too long to melt all the chips, a couple of minutes at the most!. I've also tried the microwave method with this brand of chocolate, don't waste your time!.

Make sure you don't get even a single drop of water in it!. And forget the mcrowave, the double boiler and lots of patience is the way to go!.Www@FoodAQ@Com
You cannot 'melt' white choc at too high a temp!. double boiler should be ok, but not w/boiling water!.Www@FoodAQ@Com
