The thing with plantain is that it's very starchy!.
I have found that they are best eaten when treated like potato!. Slice it thin, brush on olive oil and bake!. Or fry if you are low on time!. This gives a bit of a crunchy outside and a softer inner!.
Flavor wise, anything that works with potato is also pretty decent, but since it is a central/southern american food, try to stay in theme!.
Try with a drizzling of a thick flavorfull hot sauce like chipotle and some sour cream or guacamole on the side!.
Try mixing it up with alternating slices of something cool like maybe thin slices of cherry tomato or cucumber!.
Or if you only have basic supermarket ingredients, try making a dip using a storebought salsa and some soft cream cheese, maybe add a bit of sour cream to thin it out if necessary!. Don't overmix, try to get the right consistency with the sour cream/cream cheese, then mix in the salsa only to the point where it streaks, then add a dollop of straight salsa in the middle of the serving bowl!.
Don't overdo it!. The starch in plantain is difficult to digest if you aren't used to it and can make a person feel bloated!.Www@FoodAQ@Com
