Actually, they did have lemon merengue pie!. **(The lemon was not from it was from a bottle concentrated!. Lots of eggs from the local farms!.)

also potato salads!.
Boston baked beans,
Brown bread with raisin and butter sandwiches!.
A lot of ham!.
Canned (homed canned in jars) everything, like prunes, cherries, peaches
and tons of apple everything (pies, turnovers, cakes)**Yes they did have apples -- the apples were in jars and cans
Oatmeal cookies!. parents had apples sauce sandwiches as a treat!.)
pickeled everything, (parsnips, beets, hardboiled eggs)

No, lemon meringue pie would not have been eaten then!. Eggs were often the only protein, and they wouldn't have been used in a dessert!. Things hard to come by then were sugar and eggs!. So cakes were often served w/o icing, and were eggless, usually baked in a cast iron skillet!. Think simple, straightforward, nothing fancy!.

Bread Pudding & Rice Pudding were common, b/c they used up leftover bits of rice and bread!.

Try googling "Depression Cooking"!.!.!. you'll get a lot of hits!. One site Hillbilly Housewife, even has some videos of a 90-something-year-old lady recreating depression-era foods in her little home!. Very entertaining and informative!Www@FoodAQ@Com

Research on SPAM!. it is one of the most interesting products of that era!. In "unwrapped" they delved on the mystery meat!. and indeed it was one of the most used product during that era!. a meat that is tasty, requires no refrigeration and very versatile meat!. there is the myth that spam is the acronym for SPAre Meat!.

One other is Jello!. The quickest, easiest nutritious dessert came from that era as wellWww@FoodAQ@Com

My Grandma who just passed away at 96, was famous for her Minnesota Beans recipe!. If I have a chance, I'll get back online after church and post the recipe!. also, folks would make sandwiches with Great Northern beans and catsup on white bread!.

When my Grandpa(who did not drink) would go looking for work in the Depression, he'd stop into bars(after Prohibition was repealed), and order "hot water for tea", then use catsup to make tomato soup, and eat the free crackers at the bar!.Www@FoodAQ@Com

My grandmother would saute garlic in olive oil (we're Italian-depression or not, it was a staple in the house) and add onions or celery sliced if she had it!. Add cannelini or any white bean and salt and pepper and some water to loosen it up!. Once that was incorporated and cooked for about 20 minutes she would taste for salt and pepper!. Then she would take stale Italian bread and break it up into a bowl and pour the beans on top of it!. Mix it all together and it was dinner!.Www@FoodAQ@Com

Potato soup would have been eaten a lot - potatoes have always been cheap, and you just boil them in salted water until they're soft!. Of course, it tastes a lot better if you fry a chopped onion with butter in the pan before you add the potatoes and water (leaving the fried onion in the soup)!.Www@FoodAQ@Com

My mom used to make a Depression-era Mock Apple Pie that was mostly crackers and seasonings!. No apples whatsoever!. (They were too expensive unless you had your own trees!.) It was tasty and you'd have sworn apples were in there!.

I'm sure many cookbooks will have the recipe, or allrecipes!.com will!.Www@FoodAQ@Com
