Question: Flour tortillas are stiff. Suggestions?
I've tried to make flour tortillas from scratch before and unfortunately they didn't turn out very well. They were stiff and hard. Someone told me about an already prepared flour tortilla mix where all you have to do is add water. I tried it just now (I followed the directions exactly) and they still turned out stiff. They weren't soft at all. What am I doing wrong??

Your error is very common because only true Mexicans know how to make the best soft tortilla and they don't tell anyone how to make them. The main reason behind them not telling is because no one can understand them at all, even if you know how to speak Spanish. Anyways I went to the far reaches of Mexico and found the answer myself in the city of El Durrado, it is a simple mistake you are making. Obviously there are reasons why water is not used by the Mexicans to make any kind of food, the water down there makes you sick. Instead of water they use milk, most commonly from a goat and if that is not around they use Coca Cola. Substitute this in for the water and your tortillas should not end up stiff and will taste delightful. And if you still get it wrong, which you shouldn't, just do as everyone else and go to the store and buy already made tortillas.



Without seeing the recipe I don't know what you are doing wrong...But I can give you some tips on how to soften the finished tortilla...

Put a tortilla on a plate, covered with a damp paper towel. Alternate tortillas with paper towels. Microwave for 30 seconds to one minute, depending on how many tortillas...OR

Preheat the oven to 250 degrees. Wrap a stack of tortillas in a damp dishtowel and place in a casserole dish of similar size. Cover with a lid or a piece of aluminum foil tightly on the dish. Place in oven for 20 minutes.

Once the tortillas are heated, transfer them to a tortilla warmer to keep them nice and hot. Or on a plate under a warm damp dishtowel...The secret is to keep in the moisture...

You can microwave them for about 10 seconds each to soften them. Or if you're planning to use them in a casserole, you could briefly soak them in chicken broth to soften them.



Briefly heat them in a frying pan or skillet. About 30 seconds per side.
You don't need a mix. There's not much more to tortillas than flour, water and a bit of soda and salt.

As soon as they are cooked wrap the in a clean tea towel while they cool down,This will keep them moist and soft.
