making bbq pork chops for dinner?!

Question: Making bbq pork chops for dinner?
boneless small thick, pork chop loin.
but problem is, i have just one piece left! I plan on cooking that for just myself tonight anyway, because my husband dislikes bbq sauce.
The way i cook this is in the oven for about an hr 1/2 at 375 degrees. Would it be okay to make just one in the oven? If so, should i put it in for less time.. and maybe lower heat?
Thanks!

Yes, if you are only going to cook one you should lower the cooking time, and possibly the heat. I would also suggest broiling it though, it will be much faster. Or, you could also cook it in a skillet. I cook mine by putting some butter or bacon grease in a skillet, sprinkling seasoned salt on the pork, and cooking it on one side until it is a rich, dark brown. Then I'll flip it and cook it until it is cooked all the way through. Then I brush mine with some BBQ sauce and serve with extra sauce

You can do just one. No need to adjust time or temperature.
What I like doing with a chop that size, if I don't stuff them, is brown on both sides then place in a pan with a bit of apple cider and some apple sauce or apple butter. Bake then add any BBQ at the end. The apple really does a great job with the chops and it adds to the flavor of the BBQ sauce.

How about broiling it? Heat up your broil pan first so you get the sizzle when the chop hits it. Broil it on both sides, then hit it with a little BBQ sauce. It looks better than baked.

Butterfly the pork chop to thin it out and then roll it up with some bacon and cheese in it, use some twine to keep it closed. soooo good!
