Question: Can you make pesto using a smoothie maker? is there such thing as a tasty but low fat pesto version?
Answers:

You can make it in any appliance that blends the ingredients together.
Don't know about a low fat version. Nuts and oil are a big part of the flavors of a good pesto.
Sometimes you need to make the good stuff and simply eat less of it.
When you start trying to "low cal or low fat" some foods, the results is less than appetizing and a waste.



i honestly don't know about the smoothie maker (or blender). i suppose it couldn't hurt to try; i mean, they both blend ingredients together, so it should be ok.

Lower Fat Basil Pesto
makes about 1 cup

2 cups fresh basil leaves, packed
2 medium cloves of garlic
1/4 cup part-skim ricotta
3 tablespoons good olive oil
1 oz parmesan cheese, grated
1/4 teaspoon of kosher salt
1/4 teaspoon freshly ground black pepper


In a food processor, whiz the basil and garlic until minced. Add the ricotta, and use the feed tube to stream in the olive oil and water. Stir in cheese and seasonings and serve. If serving with pasta, add a few tablespoons of the pasta water to loosen the sauce.
