Geeze, you would catch me when my crystal ball is in the shop for repairs. What kind of ribs? What cooking method?



Besides spare ribs there are beef short ribs, which I made last night. Rub with salt and pepper and roast for 27 minutes per pound at 325, basting the pieces in their juices frequently. If not already sliced, slice so each piece has a bone. Let cool. Look up the recipe for German mustard sauce. Its complicated. When ready to eat, spread with two tbsp of olive oil and 4 tbsp mustard . Cover with bread crumbs. Broil 4 to 5 min. and serve with mustard sauce. If you include sauerkraut, get the bag in the meat dept., NOT the canned! Simmer in white wine for 20 min.s, covered. You can add apples, onions, etc, too. If you want to complete the meal, make German warm potato salad. God its good!

Remove the pan from the oven, and unfold the foil, then return to the oven, raise the temperature to 375 degrees and allow to cook 10 to 15 more minutes. This will allow the ribs to brown and will cook off some of the juices in the pan.

It really all depends on how many slabs you're cooking and the size of the slabs. When I make ribs, I usually make about 3-4 full slabs of St. Louis Style Baby Back Ribs. For a "fall-off-the-bone" rib, bake in the oven at 350-375 degrees F for 3-4 hours. Finish on the grill to mark them and slather on the BBQ sauce.
