Question: Help!! After rising pretzel dough, i cannot knead it?
I used the water-in-pot method for rising the dough, and now that i've taken it out it cannot be kneaded? It doesn't feel like dough but rather it feels like a large chunk of bread.. ):

Could it have been that i had the stove at too high of a temperature?
(Because it was on almost max heat, for one hour... )

I think you are right. Your temp is too high and you killed the yeast. Your dough should be fluffy and 'un-poof' when you press it down. I raise mine on the stove while pre-heating but it's on an elevated area that is warm but not hot.
I find covering the dough with saran wrap works better than a damp towel.



It almost sounds like you already cooked the pretzels, but like a bagel. Yeast can be killed by too hot a temperature.

I would start over.
