Vegitable fruit salad is very much easy and new kind of recipe, even that is good for health. Try this once you can't stop loving it.

Ingredients:

1 medium size Carrot
1 Onion
Black Grapes (seedless) - a bunch
2 Tomatoes
Fresh Lettuce - a pack
1 Apple
Cherries - few
1 medium Radish

For Seasoning:

1 Lemon
Salt to taste
Green chillies
Small bit Ginger
1 tablespoon Cilantro


Method:

Grate Carrot, Radish and chop the other Ingredients into small pieces and mix them together.

Then add the juice of one Lemon and grind the Green chillies, Ginger and the Cilantro and add it to the mixture and your Salad is ready to be served.

This goes well along with Parathas and even as a main dish for lunch.

Ingredients:

2 cups Assorted vegetable (cut into longish pieces)
(You can use Green beans, Peas, Carrots, Cauliflower, etc)
3 cups Rice
1 cup Curd (yoghurt)
Salt to taste
6 Green chillies(minced)
1 teaspoon Fresh garlic paste
1 teaspoon Fresh ginger paste
2 teaspoon Chopped mint leaves
2 teaspoon Chopped coriander leaves
2 Tomatoes(chopped)
1 teaspoon Fresh dhania (coriander) powder
1 teaspoon Fresh cumin powder
1 teaspoon Red chilli powder
1 teaspoon Clove powder
1 teaspoon Cinammon powder
1 teaspoon Chopped cashew nuts
1 stick Cinammon, broken into bits
2 Cloves
2 Cardamoms
2 Medium sized onions, sliced finely
3 tablespoon Ghee
Saffron (orange coloring) - A pinch
1-2 teaspoon Milk


For Garnishing:

1 cup deep Fried Onion slices for garnish
1/2 cup chopped Mint and Coriander leaves for garnish(Optional)

Method:

1. To the vegetables add curd, salt, green chillies, garlic paste, ginger paste, mint leaves, coriander leaves, tomatoes, coriander powder, cumin powder, chilli powder, clove powder, cinammon powder to it and let it marinate for about 1/2 hr.

2. Heat the ghee in a pressure cooker and add the cashew nuts, cinnammon, cardamom and cloves.

3. Fry for 15 seconds and add the sliced onion. When the onions turn transparent, add the marinated vegetables and without adding any water, cook the vegetables on medium heat till the masala is well cooked and turns aromatic.

4. The vegetables should be completely done. The masala will reduce and lose all moisture. Set aside.

5.Wash the rice and add it.

6. Add 6 cups of water. Dissolve the saffron in the milk and mix with it.

7. Allow it pressure cook for 5 min and add 2 teaspoons of ghee to add flavor before serving.

Curried Vegetables

Ingredients:

3 large Potatoes
1 Onion (sliced)
4 tablespoons (2 oz) Butter or Ghee
2 cups Broth
1 small Zucchini or Squash (about 1/2 pound), sliced in rounds
1 cup Green Peas (fresh, frozen or canned and drained)
1 cup cooked Pea Beans
1/2 Cucumber (peeled and sliced)
Juice of 1/2 Lemon (2 tablespoons)
1 tablespoon Curry powder
2 tablespoons Flour


Method:

1. Peel Potatoes. Slice lengthwise 3 times to make long strips, then slice into thin strips about 1/2 inch wide by 2 inches long.

2. Melt 2 tablespoons Butter in a large skillet or wok, add Potatoes and Onions and fry over medium-high heat until Vegetables are tender, about 15 minutes.

3. Add Broth, Zucchini, Peas, Beans, Cucumber, Lemon juice and Curry powder to skillet. Simmer over low-medium heat until Vegetables are tender, about 30 minutes. If most of the liquid has evaporated, you can add more Broth or Water.

4. While Vegetables are simmering, melt remaining 2 tablespoons Butter in a small saucepan. Add Flour, mix well and simmer over low heat until mixture is browned, taking care not to let it burn.

5. When Vegetables are tender, add Flour and Butter mixture to skillet. Stir in well and continue to simmer until mixture thickens, about 5 minutes. Season with Salt and Pepper if desired.
