what you can do is roll it into a log, wrap it with saran(plastic) wrap and freeze it.. then when you need quick cookies.. take it out. thaw a bit, and slice inch slices, then quarter them.. roll in cinnamon and sugar the quarters. plop on a cookie sheet then into oven for about 9 minutes.. easy cookies (similar to frozen cookie dough you get from pillsbury)...
you dont have to roll in cinnamon and sugar.. thats optional.. but my kids like it like that..

Let it sit out for about 20-30 min to warm up a bit. Roll, cut out and bake.

Or let it come to room temp and roll into a log then wrap in seran wrap Very well.

yes but make sure that you have wrapped it in cellophane to keep it moist.
