Answers:

The secret ingredient in The Mariner's Barge is sea salt that has been gently massaged into lean chicken tenders before slowly cooking to a caramelized stage. Sea salt can be found in your favorite 'large marketplace', specialty shops, or purchased online. If purchased loose, it's very economical - about 25 cents to fill a good-sized shaker. If you cannot find sea salt, then substitute coarsely grained salt or regular salt.

We also used Earthgrain's Oatberry Wheat bread - which is 'to live for'! Please feel free to substitute your favorite breads.
Ingredients for Diet Sandwich Recipe - The Mariner's Barge

small package of chicken tenders
sea salt OR regular salt
white OR black pepper (optional)
Earthgrain's Oatberry Wheat Bread
onion
mushrooms
roasted pepper
light Mayo
no calorie butter spray (refrigerator kind)
non-stick cooking spray

Preparing chicken for diet sandwich recipe:

Start with lean, white chicken tenders. A half-pound will make three generous sandwiches. Gently rub the sea salt into the meat. Next, spray non-stick cooking spray in a pan and cook at medium heat until meat is almost done on one side. It will be a light golden brown color - very rich looking.

If your pan begins to stick, simply add more spray BUT please be careful! You'll need to remove your pan before spraying. If you hit the flame it will belch out (Trust me, I know this!) (Please don't ask why!!!).

After your chicken has 'caramelized' on both sides, remove and add to the pan:

- freshly sliced onion rings

- freshly sliced mushrooms

- red roasted peppers (Vlassic makes some great hum-dingers!)

Cook until mix is done; onions will appear clear. The mix should look 'grilled' by the heat from the pan.

In another pan, spray bread thoroughly with REFRIGERATED no calorie butter spray. Slowly toast on one side in your pan that has been sprayed with non-stick cooking spray. You want your bread to be hard and crispy which will bring out a 'buttery' taste on the crust. Spread a bit of LIGHT Mayo onto each underside of your toast.

Assemble your sandwich by adding chicken, grilled onions, mushrooms and the roasted peppers.

This generous toaster sandwich contains about 350 calories and minimal fat.

i have never figured the calories, but i can say i like to eat this, i am not on a diet but i know it is a lower calorie sandwich type food, and really good -----mix low fat mayo with some horseradish sauce to taste, (alittle goes a long way) put on a slice of french bread, top with thin slices of cucumber, tomatoe and red onion, maybe even a thin slice of ham, top with another piece of bread with the mayo mixture on it, yummy. i have even taken a large outer lettuce leaf, laid down the ham spread with mayo mixture, topped with the cucumber tomato and red onion and rolled it, very good. bean sprouts or radish sprouts can also be added. good luck.

I make a low cal version of pulled pork. I use boneless skinless chicken breasts that are cooked in a slow cooker and I add crushed canned pineapple and a little liquid smoke flavoring. You can add some diet soda like diet coke also to tenderize the meat and add more color if you want it darker. Put together and cook overnight or 5-6 hours during the day. Serve hot over sandwich buns. Calories depends on the portion size but you can estimate maybe 70 -80 for the meat plus whatever the bun is. Very low fat compared to the original. Log into SparkPeople.com (sign up for free) and I have it on their recipe site with exact measurements and portions. It makes a lot so you can freeze and have leftovers or invite some friends over. They'll never know its supposed to be diet food.

I take 2 slices of whole grain bread.. toast them..
then take some low salt/low fat deli smoked turkey slices..
two slices (thin) on my sandwich..
add some honey mustard (homemade.. I take a tsp of mustard and a tsp of honey and blend
then add some baby spinach leaves, ruby red tomato slices..and anything else I might have.. like cucumber slices, or avocado slices..
then a slice of low fat mozarella or swiss cheese.. then WALAH!.. TADAA!.. my yummy healthy sandwich....
