For lunch I usually have one of these banana nut raisin muffins with just an apple or a piece of fruit. I got them online, here's the link:

1/3 C Smart Balance Oil
1/2 C Honey or Agave Syrup
2 medium to large eggs
1-t pure vanilla extract
2-mashed ripe bananas
1 -3/4 C whole wheat flour
1/2 t salt
1/4 t cinnamon
1-t baking soda
1/4 c very hot water
1/4 C pecans or walnuts
1/4 C raisins or Crasins
Smart Balance Cooking Spray

Prep Time:
15 minutes

Cook Time:
18-20 min.

Yield/Notes:
Depending on the size of your measuring tool - you can usually get 12 medium-sized muffins; I use one of those new-silicone type of muffin tins. Remove from muffin tin and cool on rack

STEP 1:
Preheat oven to 400 degrees
STEP 2:
Mix honey, oil, eggs, vanilla, mashed bananas, nuts, raisins, cinnamon and salt in a bowl. Mix well
STEP 3:
Blend in the whole wheat flour and mix well, so there is no dry flour seen
STEP 4:
Add baking soda to 1/4-C of boiling water in a small container
STEP 5:
Pour baking soda over the flour mixture and stir until fully incorporated.
STEP 6:
Spray muffin tin (12) with baking spray and spoon in mixture
STEP 7:
Bake for about 18-20 minutes, check with cake tester to ensure center is done.


For dinner I have butternut squash soup, my absolute favorite, sometimes with a little honey mustard grilled chicken. Here are the links and recipes for both:

Ingredients
1 (2 to 3 pound) butternut squash, peeled and seeded
2 tablespoons unsalted butter
1 medium onion, chopped
6 cups chicken stock
Nutmeg
Salt and freshly ground black pepper
Directions
Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper. Serve.

Ingredients

1/3 cup Dijon mustard
1/4 cup honey
2 tablespoons mayonnaise
1 teaspoon steak sauce
4 skinless, boneless chicken breast halves
Directions

Preheat the grill for medium heat.
In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.
Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning

1 pack of kuey teow (500g)
10 prawn, peeled & cleaned
2 squids, cleaned & cut into pieces
2 eggs
200g bean sprouts
100g chicken breast meat/pork, cut
1 tbsp chili paste
50g green mustard, washed & chopped
2 glove garlic, mashed
2 tbsp light soy sauce
1 tbsp dark soy sauce
salt to taste

how to do:
1)a pan or wok, add in oil and garlic, fry till fragrant
2)add in chicken meat, prawn, squids and 1/2 tbsp light soy sauce, stir fry till mix well
3)add in small amount of bean sprouts, stir fry for 10 seconds, then add in the kuey teow fun, green mustard, 1 tbsp dark soy sautbs spoonplight soy sauce andchili paste, stir fry for 2 minutes (none stop).
4)pour in the bean sprouts, quickly stir fry till mix well. Keep the fried noodle in one corner of the pan or wok, add 1 tsp oil to the other side of the pan, beat the eggs and fry till almost cooked, pour in the fried noodle and stir fry till mix well.(see pic)
5)Remove heat, serve hot.

Something simple and quick.

Whisk two eggs with a splash of milk, chilli powder, grinded pepper, touch of curry powder and two finely chopped chillis

Soak 2 crumpets in this and fry in a pan like french toast.

Also fry 2-3 pieces of bacon (smoked) with the crumpets in the same pan.
