I bought a load of raspberry's, anyone got quick ideas of what I could use them for?!

If you've got loads then the obvious choice is Jam. I made some last year from raspberries grown in my small backyard in London and I've never tasted jam like it in my life before !
You can make Raspberry sobert, raspberry chicken and raspberry vinegrette/vodka ( you can give these as gifts)
Raspberry Chicken

Ingredients:
2 chicken breasts.
2 tablespoons of olive oil.
2 tablespoons of shallots, finely chopped.
? cup of raspberry vinegar.
? cup of chicken stock.
? cup of heavy or whipping cream.
1 tablespoon of crème de cassis.
10 fresh raspberries.
Chervil leaves, for garnish.
Preparation:
Rinse the chicken well and pat dry.
Cut each chicken breast in half along the breastbone line.
Remove the fillets (the finger-size muscle on the back of each half) and re- serve them for another use.
Flatten each breast half with the flat end of a meat pounder until thin.
In a large skillet, heat the olive oil.
Add the chicken breasts and cook over medium heat until they are lightly colored (approximately 3 minutes
per side). Remove from the skillet and set aside.
Add the chopped shallots to the skillet and cook over low heat until they are translucent (approximately 5
minutes).
Add the vinegar, raise the heat, and cook, stirring occasionally, until it has reduced to a syrupy spoonful.
Whisk in the chicken stock, cream, and crème de cassis, and simmer for 1 minute.
Return the breasts to the skillet and simmer them gently in the sauce until they are just done (approximately 5
minutes).
Using a slotted spoon, remove the chicken breasts and arrange them on a heated serving platter.
Simmer the sauce gently until it has reduced and thickened slightly (approximately 3 minutes).
Add the fresh raspberries and cook 1 minute.
Pour the sauce over the breasts.
Ella’s Raspberry Vinaigrette
1/2 cup mild oil, such as canola or vegetable oil
2 TB honey
1 scant TB Dijon mustard
3 TB red wine vinegar (balsamic works well too)
1 tsp fresh lime juice
salt and pepper to taste
half of 1/2 pint fresh raspberries, about 1/2 cup*
*Frozen berries, thawed, can also be used.
Combine all ingredients except berries in a mini-chop, processor or blender and process briefly to emulsify. Add berries and process until liquid. Check seasoning by dipping a piece of the greens into the dressing to get a true assessment. I like walnuts or pecans in salads using this dressing.
Makes about 1 1/4 cups. Store in fridge and shake or whisk well before using again.

wash, spread on cookie sheets on paper towels, freeze, put in zip lock bags for fantastic quick snacks.
wash, dump into kettle, cover with just enough water, bring to simmering boil, cook for 20 or so minutes. remove from heat. Add the amount of sugar and either Sure-Jel or Certo called for to make jam. Put into jelly glasses and store upside down til needed.
add to jello for a super taste treat.
make cobbler! 1 cup flour, 1 cup sugar, 2 teaspoons baking powder, 1/4 teaspoon salt, stir all together, melt 1/2 stick butter or margarine in 9 x 13 baking dish or pan. Add 1 cup milk to flour mixture, pour batter over butter in baking pan. Now load it with berries!! Bake at 350F for 1 hour. Serve with whipping cream, whipped cream, ice cream, half n half, or sweetened condensed milk.
Raspberry Tiramisu
1 cup seedless raspberry jam
6 tablespoons orange liqueur (recommended: Grand Marnier)
1 pound mascarpone cheese, at room temperature
1 cup whipping cream
1/4 cup sugar
1 teaspoon pure vanilla extract
28 soft ladyfingers or 2 (12-ounce) pound cakes, cut into 3 by 1 by 1 1/2-inch pieces
3 (1/2 dry pint) baskets fresh raspberries (about 3 3/4 cups total)
Confectioners' sugar, for serving
Stir the jam and 4 tablespoons of the orange liqueur in a small bowl to blend.
Combine the mascarpone and remaining 2 tablespoons of orange liqueur in a large bowl to blend. Using an electric mixer, beat the cream, sugar, and vanilla in another large bowl until soft peaks form. Using a large rubber spatula, stir 1/4 of the whipped cream into the mascarpone mixture to lighten. Fold the remaining whipped cream into the mascarpone mixture.
Line the bottom of a 13 by 9 by 2-inch glass baking dish or other decorative serving dish with half of the ladyfingers. Spread half of the jam mixture over the ladyfingers. Spread half of the mascarpone mixture over the jam mixture, then cover with half of the fresh raspberries.
Repeat layering with the remaining ladyfingers, jam mixture, mascarpone mixture and raspberries. Cover and refrigerate at least 3 hours or overnight.
Dust with the confectioners' sugar and serve.
A quick idea?
Mix together two cups of oatmeal
2 tablespoons of melted butter
a light sprinkling of flour (only a few teaspoons)
1/2 cup of brown sugar
a teaspoon of cinnamon
and a pinch of nutmeg
until it's all sort of chunky
Spread the mixture out on a greased baking sheet
arrange the raspberries on top
bake for 30 minutes at 350
serve with whipped cream or ice cream
(I know that you use metric measurements but it's an easy recipe to eyeball, you really can't get it wrong)
You could add some ice and milk and make a smoothie. Put them in a bowl, add some yogurt and eat like that. If you have meringue, crush up some meringue and either eat with them or add some yogurt and eat like that. If you have pancake mix, make a pancake, add a bit of ice cream/cream and have raspberries with it. Or just eat the raspberries as they are. :)
Fill a huge tub or barrel with the raspberries, get in the tub or barrel and jump up and down, squishing your butt against them, smashing and squeezing. This will create a huge amount of juice which you can then drink. Enjoy!
My mind.
Jam- add as much sugar as raspberries and boil for a while (about an hour). Put in fridge and set. Pavlova - cream and meringue. Puree and freeze them. Put in cake with chocolate.
Pies, smoothies, tossed with sugar and served with whipped cream or over ice cream, fruit parfaits, raspberry bars (my fav), make a stove top jam to top pancakes or french toast
Fold theminto choc mousse for valentines day.
Stir into jello jigglers for a fun snack
