Definitely a lot different! You might make it taste fair if you were to add some bacon or meat, onions, peppers mushroom kinda like a regular egg omelet. And Cheese over.. but then you would no longer be making a healthy egg recipe LOL
If you could add just a regular egg with some extra whites it would help the taste. sorta 3 whites to 1 whole egg. Just an idea.
Here are some visual egg white omelet ideas:

It will be bland and taste boring.
The texture will also be different. Yes I understand that the yolks is where the fat and stuff is, but it is also where the nutrients are in the egg. If you don't have cholesterol issues thengo ahead and eat the Whole eggs, even if you have cholesterol you can eat the whole egg just limited amounts.
If you want your omelette to still taste decent but be a but lighter do One whole egg and 1-2 whites.
Well, we think alike. When I make an egg white omelet I usually drown it in cheese and meat so it will have flavor. Truth is I would have eaten more healthy had I left the yolks in the omelet. I say: Live dangerously and eat the yolks cause the whites alone have no flavor at all.
When I go out for breakfast, I get an all white spinach & feta omelet. I think it's YUMMY. Feta is pretty flavorful, and I don't miss the yolks at all.
At home, I use 2 eggs, but one yolk.
If you add a lot of cheese, you're defeating the purpose of omitting the yolk.
I'm sure it would be far from the ordinary omelet. But is an egg yolk so bad for health? I always thought eggs are good source of protein.
