The rind (outer skin) of the lemon. Thinly grated



The yellow outer part when grated is called the zest because you are releasing the oil when you grate it. best NOT to use a waxy coated lemon when you do this. And when grating use the finest of the holes to get the zest

The bitter white under it is called the pith



Lemon grating just below the peel. scrape the outer peel then grate from a fresh lemon.



It's the skin, the yellow part. The white part under the yellow part is bitter and we do not use that.



the rind of the lemon, you grate it with a grater and get the "zest"



take a lemon and rub it on a fine grater. What comes off is the zest.
