Answers:

"Guinness Lamb Stew"
Hands-on time: 35 mins. Total time: 3 hr. 20 mins
(If you can't find Guinness, or if you don't like it, substitute another dark beer.

You'll need ;
8 tesp. olive oil, divided
2 cups chopped onion
1 tbs. chopped fresh thyme
1 1/2 tesp. chopped fresh rosemary
3 tbs. all-purpose flour
2 1/2 pounds boneless leg of lamb, trimmed & cut into 1-inch cubes
1 tesp. salt, divided
3/4 tesp. freshly ground black pepper, divided
2 cups Guinness Stout
1 tbs. tomato paste
3 cups fat-free, lower-sodium beef broth
1 bay leaf
2 cups peeled Yukon gold potato
2 cups 1-inch-thick diagonally sliced carrot
8 oz. baby turnips, peeled & quartered
1 tbs. whole-grain Dijon mustard
1/3 cup chopped fresh parsley

1. Heat a large Dutch oven over medium-high heat. Add 2 tesp. oil to pan; swirl to coat. Add onion, thyme, & rosemary, sauté for 5 mins, stirring occasionally. Place onion mixture in a large bowl. Place flour in a shallow dish. Sprinkle lamb evenly with 1/2 tesp. salt & 1/2 pepper. Dredge lamb in flour, & shake off excess. Return pan to medium-high heat. Add 1 tbs. oil to pan; swirl to coat. Add half of lamb mixture to pan; sauté for 6 mins, turning to brown all sides. Add browned lamb to onion mixture. Repeat the procedure with remaining lamb & remaining 1 tbs. oil.
2. Add beer to pan; bring to a boil, scraping pan to loosen browned bites. Cook until reduced to 1 cup ( about 5 mins. ). Return onion mixture & lamb to pan. Stir in the tomato paste; cook 30 seconds. Add broth & bay leaf; bring to a boil. Cover, reduce heat, & simmer, uncover for 1 hour & 15 mins, stirring occasionally. Uncover & stir in potatoes, carrot, & turnips. Simmer, uncover, for 1 1/2 hours or until meat & vegetables are tender. Stir in remaining 1/2 tesp. salt, the the remaining 1/4 tesp. pepper, & 1 tbs. mustard. Ladle about 1 cup stew into each of 7 bowls; sprinkle evenly with parsley.
Yields 7 servings.

(A little hint; Hearty ingredients like onions hold up to long simmering. Add more delicate items, like potatoes or herbs, midway or near the end of cooking.)

mexican lamb recipe:
you will need:
a pot
cooking time about 3 hours

lamb meat cut into squares
soak about 5 guajillos in boiling water for about a pund of meat, for about 15 minutes

when guajillos are soaked blend in some:
cumin(2tsp)
oregano(1tblsp)
garlic(3)
pepper(2tsp)
salt(enough)
vinegar (enouch to cover seasonings in blender)

blend unitl smooth
strain into a pot with with just the meat

cook in low heat for about 2.5 hours


make sure this dish has enough salt to your taste

do not substitute the vinegar because it will help tender the meat and release the juises

onced its cooked serve with a side of rices and steamed vegies
