Spicy bruscetta chicken bake
Ingredients
1 1/2 lb. boneless skinless chicken breast cut into bite-size pieces
1 cup shredded pepper jack cheese
1 14 1/2 ounce can diced fire-roasted tomatoes
1 6 ounce package Stove Top for chicken
1/2 cup water
3 cloves garlic, minced
1 tablespoon Italian seasoning, Dell'Aple recommended
Big pinch kosher salt
Pinch red pepper flakes
Method
Heat oven to 350 and spray a 9 x 13 pan with Pam
Lay the chicken in an even layer in the bottom of the pan and sprinkle with the cheese.
Mix tomatoes, stuffing mix, water, garlic, and Italian seasoning, salt, and red pepper flakes together until stuffing mix is moistened. Mound the stuffing mixture on top of the chicken and the cheese in an even layer. Bake 30 minutes or just to the point when the chicken turns opaque.

"Crispy Onion Chicken"
Prep: 10 mins bake: 30 mins yield: 4 servings
1/2 cup butter, melted
1 tbs Worcestershire sauce
1 tsp. ground mustard
1/2 tsp. garlic salt
1/4 tsp pepper
1 can (6 oz) cheddar or original fresh-fried onions, crushed
4 boneless skinless chicken breast halves
1. In a shallow bowl, combine the butter, Worcestershire sauce, mustard, garlic salt, & pepper. In another shallow bowl, add 1/2 cup fried onions. Dip chicken in the butter mixture, then coat with onions.
2. Place in a greased 9-inch sq baking pan. Top with remaining onions; drizzle with any remaining butter mixture. Bake, uncovered, at 350 degrease for 30-35 mins or until chicken juices run clear.

Prep/total time:15 mins yields: 6 servings
1 pkg. (16 oz) frozen pear onions thawed
2 tbs. butter
2 tbs. plus 1 1/2 tsp brown sugar
1 tbs. Dijon mustard
2 tbs. minced fresh parsley
1. In a large skillet, saute onions in butter until tender. Add brown sugar & mustard; cook 2 mins longer sprinkle with parsley.
(Tip) to use fresh pear onions in this recipe, cook them in boiling water for 2 mins. Drain & plunge into ice water; pinch the root end & the peel will easily slip off, Continue recipe as directed.
Shrimp Scampi
4 tsp olive oil
1 1/4 pounds med shrimp, peeled (tails left on) and deveined
6-8 garlic cloves, minced
1/2 cup low sodium chicken broth
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup + 1 T minced parsley
1/4 tsp salt
1/4 tsp freshly ground pepper
4 lemon slices
In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, 2-3 min. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter, keep hot.
In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; bring to a boil. Boil, uncovered, until the sauce is reduced by half; spoon over the shrimp. Serve garnished with the lemon slices and sprinkled with the remaining tablespoon of parsley.

Shrimp primavera
1 lb. uncooked (frozen) medium sized shrimp
8 oz. (or more if you life) multi-colored rotini pasta
1/2 cup Zesty Italian salad dressing (Low-fat, if you wish)
1 large red pepper, chopped
1 cup packaged matchstick carrots
1 cup fresh surgar snap peas
2 cloves garlic, minced
2 tbs. grated parmesan cheese
1 tsp. grated lemon peel
Peel shrimp. This may be done ahead of time the same day and refrigerated in a bowl of cold water if you wish. Cook pasta as directed on package. Meanwhile, heat dressing in a large nonstick skillet or two-handled pot on medium heat. (I prefer the pot, since this makes a large volume of food.) Add shrimp, vegetables and garlic, cook and stir until shrimp are pink and vegetables are crisp-tender. (About 10-15 minutes.) Drain pasta, toss with shrimp mixture. Sprinkle with cheese and lemon peel.
This takes about an hour to prepare and cook, and will serve at least 4 people. Serve with garlic bread.
