Can't say that I ever had a challenge cooking rice. I have tried many methods and all work pretty well. Lately, I've been using a method I found in a Persian cookbook that I have. Basically, you use lots of water (way more than can be absorbed like you would with pasta) and then drain the rice after 17 minutes and then leave the rice in a covered pan for 5 minutes to rest.
