No matter what the pork content is in a sausage there will always be other ingredients otherwise there would not be any taste except pork.
Go for sausages that have at least 85% meat content and do not have any mechanically deboned meat in them. The value sausages contain all the fat from a pig such as ears,snout and tail. these are not good cuts and that is why they are cheap and have a lot of fillers to bulk them up.
Read the label every time before choosing.
100% meat sausages are not usually made or recommended because a certain amount of fat, flavouring etc are needed in order to avoid a dry and possibly poor flavour product. If you're looking for a lean pork dish, then you should go for tenderloin rather than sausage, or just make patties etc out of lean pork mince and herbs ( like a burger).
40% is pretty rubbish though, and you can tell by the huge amount of fat that comes out when cooking, and of course they are cheaper because they are bulked out by fat and cereals. 70% is generally a good balance of flavour, and will be more expensive. Read the ingredients, think about what you like and also what your budget says.
A 90% meat sausage is a good quality sausage and, as a chef, I think the Jamie Oliver ones are decent and I buy them. A sausage is unlikely going to be 100% pork mainly because it needs flavouring and a bit of fibre to help bind it all. The rule of thumb is the higher the pork content, the better the quality.
I would never in a million years knowingly eat a 40% meat sausage. They are a con on meat quality and a con on 'filler'. But you get what you pay for.
My fave is Morrissons own brand pork and tomato butchers sausage...but as a butchers daughter am really cautious as to the sausages out there..there is much nastiness and horrific stuff put into sausage...I know....it's not something i buy regularly...
You really can't get a 100% meat sausage as it wouldn't hold together, there is a need for certain binders and fillers to make it the right consistancy...usually egg and breadcrumbs in household makes......but who knows what in other makes??
Hi yeah you can buy 100% pork sausages from any butchers.. Aldi do a brand 9 sausages in a black tray which are great value and 80 % pork, they are lovely..
